thanked me , and gave me like 100 yen or

next generation . The old-school image is
still strong . I wish we could gradually
change that perception—that craftsmen
always work long hours, get low pay, and
have it rough. [Music] So, are things like hours and pay normal? Isn't pay the top priority? Food service
is often seen as low-paying with long
hours, and that's basically true. But if
there are craftsmen who show that working
hard now can lead to something , or serve as role models … [Music]
[Music] Well, if there are chefs who inspire you , it makes you want to push yourself . Like athletes driving nice cars ,or wear
stylish clothes . For me , since I like hip-hop , I buy
clothes. Doing this job , if you work hard, you can become like
them someday . It's not exactly a role model, but I
can't say it's pretentious . I just think,
if I can be a part of that , that's what I
want right now . Food service is a dream ,
I think. I still want to achieve it , so
I'm only halfway there , but I think it's
a dream-filled field. At the same time, you really gain so much . Cooking, talking about it , there are happy parts, fun parts . Of course, that means there are tough
parts, hard parts too. But I think if you overcome those, a better
world opens up .Do I like cooking? Yeah , I love it . I'm not being forced into it . I chose this job because I love it , and
all the responsibility is mine. Since I chose this path , I'll keep doing it because I love it . I keep going with the mindset that I
don't want to lose to anyone in cooking . I want to keep growing, take on more

people, " Hey , there are chefs like this
too." At the same time , I hope young people get even a little

more young folks to join the world of

running it for so long had passed away. Hearing that , I approached the owner of 21st Century . I told him, " If you're going to do it,
I'll do it ."Originally, I graduated from
Tsujicho Culinary School in Osaka, and
then I started working at a restaurant in
Fukuoka under the owner. Basically, they
never intended for anyone to take over as
master, so they never taught anyone the
recipes. The recipes from the Shogun era,
when that master was here, no longer exist
in this world.I'm recreating everything
from memory, trying to recall the flavors
I've eaten all these years. So , customers do say the taste is a bit
different now , but I trust the foundation of what I ate

the last time we had a proper talk . I think it's better for me to go
independent and do what I want, rather
than stay here . I want to leave here in a
way that satisfies both me and the master,

absolutely no idea about yakisoba sauce or
champon soup . It felt like I had to start from
scratch, trying to remember what was in it
. I kept thinking about the seasonings that
were originally in this General's dish ,
like, " Oh , did they put this in?" and
then I'd add all kinds of things, taste
