Roasted Hot Honey Sweet Potatoes, Squash, & Kale

Ingredients:
• 3 small to medium sweet potatoes or yams
• 1lb. Container of cut butter nut squash or 1 whole butternut squash
• Half a head of garlic
• Half a bunch of cilantro
•Kale
• 1/2 a lemon
• 1 tbsp hot honey or maple syrup (crushed red pepper flakes for heat)
• Salt/Pepper
• Herbs De Provence
• Hemp seeds

Wash, peel, & dice sweet potatoes or yams.
Do the same with the butternut squash or you can do what I did to save the extra work, buy already diced butternut squash.
Combine both in a bowl and season with olive oil, salt, pepper, & Herbs De Provence or any dried herbs you have on hand.
Spread evenly on to a baking sheet.
Next, cut the top of the head of garlic off at the root, drizzle with olive oil and wrap in parchment paper or aluminum foil.
Place it on the baking sheet along side the potatoes & squash. Place in a preheated oven at 425 F for 45 minutes.
While that’s roasting, prepare your Kale and Cilantro dressing by first washing and drying your Kale and cilantro. Then either tear or cut Kale into bite sized pieces and finely chop your cilantro. Pour extra virgin olive oil, a splash of fresh lemon juice, salt and pepper and give it a good massage. Set it aside. This will help break down the cells of the kale and make it easier to digest.
Once root veggies are out of the oven, place the squash and sweet potatoes/yams into a bowl.
In a separate bowl, add a few pieces of the roasted garlic cloves with the Kale and cilantro. Add rest of the juice of half of lemon, tbsp of hot honey or maple syrup, crushed red pepper flakes and throughly mix. Add that mixture to the bowl of yams/sweet potatoes and squash and give it a good mix. Plate it and sprinkle hemp seeds on top for added protein, omega-3 & 6.
