たくあんのゴマ油炒め

We would take out Takuan pickles made in the winter and wash. Then we cut them in 0.1 inch. We would add a table spoon of sesame oil, then add the cut Takuan in it. We would like to be quick like less than 5 minutes to sauté them. When all the Takuan adapt the oil, we would add adequate amount of ground sesame. When sesame seeds adapt the oil, that’s it! These are Takuan pickles (Daikon pickled with sugar and salt) we made in the last winter. There’s mold grown inside, so we removed it. We would make these clean and preserve in the fridge. It smells so good. Today, we are going to sauté these with sesame oil. We would wash the bran away and wipe the water, then we would cut them in 0.2 inch. Son) Is this a well known recipe? Mom) I used to eat these frequently when I was a child. Son) I don’t remember even a bit… Again, we would wash them clean and cut them thin. By the way, we can even add some ground sesame seeds and it can be a recipe. But, if we sauté with sesame oil, it would add some good scent. Without any other seasonings, simply sauté with sesame oil and add some ground sesame would be a good companion for rice. Son) Why didn’t you make up until now? Mom) Well, I usually pickle Daikon with vinegar, so I didn’t even make Takuan… Son) Ah, okay, I see. Mom) Yeah… We would put a table spoon of sesame oil in a pan, and start heating. When it warms up a little, then we would add Takuan. It is said that sesame oil loses it’s nutrients with too much heat, so we would try to complete cooking within 5 minutes. Son) Even Takuan is too strong by being preserved for so long, sesame oil would make it mild, I guess. Mom) Well, if you made it too strong, you should simply put it in water to reduce salt. When Takuan adapt the oil, we would add adequate amount (1 and a half table spoons) of ground sesame oil and mix. It’s a simple recipe, but yet yummy. Son) It goes along with beer, I bet.

今回は以前作ったタクアンのアレンジ料理です。
この料理は僕は知らなかったのですが、意外と有名みたいです。母は子どもの頃に良く食べていたということですが、最近はタクアン自体作ることが少ないから目にしないのかもしれませんね。
もし食べたことが無かったら是非一度作ってみて下さい。これはシンプルなわりに本当においしいです。

材料:
  タクアン: 1本程度に対して
  ゴマ油: 大匙1杯程度
  すりごま: 大匙1杯半程度
