Red Borscht is one of the famous beet soup in Easter Europe, Ukraine and Russia
I tried making vegan version of this Hope you like it.
It is very easy to make
You need 1 Tbsp Olive oil
Heat the pan and add oil
1 Cup onions sauté it till turn golden
Add 1 cup of sliced carrots,beet roots and chopped potato.
Add 2 cup of water and let it cook for 20 minutes or 2 minutes pressure cook in instapot
Now add 1 Cup of bell pepper and cabbage.
Add salt and pepper to taste
Add 1 cup of water
Let it boil for 5 minutes
Garnish it with coriander and bit of lemon juice (optional)
Ready to serve.
