Easy Pesto Tuna Pasta Recipe
– Hello beautiful people. Today on Bachelor on a
Budget we are making a cheap and healthy and delicious tuna pasta. Let’s get started. Okay, we’re gonna start of
with a couple tablespoons oil in a hot pan. And I have 1 1/2 cups of chopped onion. Then we want 1 1/2 cups of
celery and 1 1/5 cups of zucchini. Keep moving that around
making sure it doesn’t burn. And I’m gonna add a tablespoon
of butter, this is optional, just gonna add a bunch more
flavor, but if you’re on a diet. And a few cloves of garlic. And 1 1/2 cups of mushrooms. Lots of veg in this pasta. Just letting that fry. Got water at a rolling boil. Just gonna add a couple cups of our pasta. I’m using fusilli. And we wanna add salt to that. We wanna salt our veggies. Now we’re gonna add a ton of flavor. I have some pesto here
that I stuck in the freezer just ‘cause it keeps fresher. So we’re gonna add about
four tablespoons of that. I buy this stuff at Costco. Totally worth it. Pesto. And mix that all around. Then we wanna taste the
pasta to see the texture. We’re going for al dente,
so just a tiny bit of a bite to it, not crunchy. Perfect. We’ll drain this. Go ahead and dump that in. And then we can add our two cups of tuna. We do this last because
the tuna’s already cooked. And one of my favorite
things to put in a pasta, is an egg. We’ll take the heat right off. We’re not trying to scramble the egg. What we want is that
creamy texture that you would get in a carbonara. It just helps to bind everything together. So we mix that all around,
we just want the heat of the pasta to cook it. Okay, that’s looking delicious. Let’s plate it. Garnish that with some parsley

Here’s how to make a cheap and healthy Tuna Pasta with pesto. This tuna pasta recipe is quite easy to make and super tasty. When I don’t have any dinner ideas, this is often a go to dinner to cook.
Recipe:
2 tbsp of vegetable oil
1 1/2 Cups of Onion (1 medium onion chopped)
1 1/2 Cups of Zucchini (Chopped)
1 1/2 Cups of Celery (1/2 Zucchni Chopped)
1 1/2 Cups of Mushrooms (Chopped)
3 Cloves of Garlic (minced)
1 tbsp of butter (optional)
4 tbsp of Pesto
8 oz of Pasta (Any type)
1 Egg
2 Cans of Drained Tuna
Instructions:
1. In a large pan on medium high heat, add oil. When hot, add onion and fry for 1-2 minutes, then add zucchini and celery. Add butter if you want more flavour and don’t mind the calories.
2. Bring water in a large pot to a boil, salt to taste, and cook your pasta till al dente, so that it has a bit of a bite to it but isn’t crunchy. Strain pasta but keep a few tbsp of the pasta water to add if pasta is too dry.
3. Add mushrooms, garlic, and salt to taste in the pan and fry for a few minutes. Add the tuna and break down into flakes. Add the pasta, and if the pasta seems dry, add a bit of the pasta. Add an egg, mix it quickly to make sure the egg doesn’t overcook. Garnish with Parsley and ground pepper.

I think putting diced tomatoes would be good in there. Maybe some heat to give it a kick would be good, too.

Ooooh I like this idea. I enjoy eating celery but I never think about ways to add it to my dishes, so I'll definitely try this pasta – it looks delicious 🙂 (PS: I've never seen anyone cook pesto before, but that's probably because I've never seen anyone freeze it either! haha I'll do it next time I buy pesto)

Definitely gonna be trying this one out. Though I would probably sub the zucchini for broccoli. Would probably take a little longer to cook though
I wouldn't substitute anything in this dish but it did look a little dry for my tastes. I would have saved a little of the pasta cooking water to moisten the finished dish. The pasta water along with a couple of egg yolks (no egg white), off the heat, would have made for a much creamier finished dish.
I'd swap the Zucchini for Kale. Any excuse for me to use Kale is a good one. Kale is literally the healthiest food, all bachelor's on a budget should buy it.

How long does a meal like this keep in the fridge? I'd like to try it, but I prefer to cook batches and eat a single recipe for 2-3 days from leftovers and I've never made anything with egg cooked in this style before.

Hello. Will try this recipe but is it possible that instead of egg, you use an all purpose cream in adding a bit of a creamy texture? 🙂
Im using mayonnaise instead of egg and toss in a lemon juice.. I dont like raw egg, prone to salmonella.. 🙂
We've cooked it today and out as surprisingly amazing and easy to make! And my husband doesn't like tuna… but he debored this dish! Thanks for the frozen pesto and egg tips. Also the order of how to add the ingredients.. it makes sense!
