Butternut Squash & Kale Stirfry

hi everybody Welcome to my channel where I dare to eat different tonight I’m going to be making some butternut squash kale stir fry and I thought I’d bring you along and show you how I did it real quick I’ve already got my butternut squash peeled cleaned out I’m going to cube that up I’m going to dice up a little bit of onion a garlic there’s my kale I’m going to devain the kale and chop it up and I got my fry pan with some coconut oil okay the first thing I do is I heat my pan and melt the coconut oil unless yours is already melted and I use a generous amount about 3 tablespoons to that I have a minced garlic clove you can see it in the pan I use the mincer you’re make it very easy rather than hand missing then I put some diced onion I have about a half a cup4 cup however much you like there’s really no measurements and I want to sauté this in the coconut oil all righty when your onion and garlic is turning translucent and you got a nice Sizzle gone on there you want to add your cubed butternut squash and this is a whole one it’s kind of a medium to small sized one and you’re going to want to sauté this for about 15 minutes or so and it’ll start to get tender you do not want to put the lid on and cook this because it will become too tender you’re going to want to stir it and watch it and it smells really good really really good this is one of my favorite vegetable side dishes uh it’s very versatile today I’ll be putting the kale with it so it’s butternut squash and kale but I’ve also substituted brussel sprouts for the kale I’ve substituted broccoli I’ve substituted uh whatever I have on hand I’ve done asparagus I’ve done cauliflower and it’s just whatever you have available I always try to pick something green to put with the butternut it looks good and it tastes fantastic the combination of the coconut oil which gives it a sweet flavor it’s unrefined coconut oil and then the savoriness of the garlic and the onion it it’s just phenomenal it’s your taste buds are going to dance right out of your head it is so good so let me finish this up and I’ll bring you back in a couple minutes okay it’s been about 10 minutes my squash is beginning to darken and look a little glossy it’s still a little firm and this is the point that you want to add your second vegetable if it’s a harder vegetable like broccoli you might want to put it in a little earlier so that it’s done I like my vegetables just a little bit al dante at least the second vegetable you put in here your squash will be finished and done and that’s why I delay putting this next vegetable in and this is kale that I’ve dained and just shredded up into little pieces and then a little about a tablespoon of chopped parsley now usually I have so much kale that this heaps out of the pan but this time I didn’t have that much so I put it in there at this point you’re going to want to turn the heat down a little I’ve been cooking on medium and I put the lid on and what it will do will allow it allows the uh the kale to wilt down a little bit and this should only take I’m going to adjust my temperature should only take a few minutes keep checking on it as soon as your kale has reduced a little bit to where you can stir it into your squash then you’re almost done the very last thing that we’re going to put on this is probably almost done cuz there’s not that much kale in there I’m going stir this up you can use any variety of taale too this is the Dinosaur Kale I just happened to get at my store the very last thing that you put on that totally you you need to do it doesn’t sound that appetizing but this is oh it makes the whole dish is I put dried cranberries that are sweetened in apple juice and you want to put a handful on there and stir it in to heat them up if you don’t have cranberries you can use dried currants or raisins and and let me put those on and then you want to add your dried cranberries and stir in you only need to leave it on the heat until it’s those are warmed up and you’re ready to serve it you know you guys need to try this let me know if you like it or not I absolutely loved it even though when I first saw it I thought it was not going to be appetizing but the flavors are just wonderful so have a good day I’ll talk to you later
