Saltfish Fried Rice (Fried Rice Series) – Mom’s Trini Cooking

hi welcome to mum’s trini cooking today i will be making a salfish fried rice i grew up eating salted fried rice from little my mom used to make it with leftover rice and i did the same for my kids and they love it so i want to share that recipe with you today so if you want to see how i do it keep watching for this recipe you will need cooked rice i am using parboiled rice you can use any rice of your choice onion pimento hot peppers and the star of the dish saltfish i’ll tell you how to get the salt out of this old fish to get the salt out of the saltfish this is what i like to do first i rinse it off to get the salt that is on the saltfish itself then i soak it in water like maybe a few cups of water to cover it let it sit there for a bit maybe 15-20 minutes throw that water out put clean water again and you can repeat it a few times now at the end of it you can taste it as you go along because saltfish is something you can actually eat it’s preserved with the salt when you get the the taste of the salt that you want in it you can stop there sometimes i even end up desalting it too much and i have you can add salt to your dish if you want to do that salt fish is something you can even eat by by itself it is so yummy i love it first i’m going to fry the salt fish i have a pot on medium heat with about a quarter cup of oil so i’m going to fry it you want to fry the salt fish until it gets really crisp and brown you want to fry the sauces until it gets golden brown because it tastes really nice and fried rice when you get it like that sometimes just to be on the soft side but crispy is better in about four minutes and the salt which is ready to turn it’s nice and brown the spoon is going to make noise because you have to kind of create it you’re looking for something like this sometimes it’ll be brown and then some eyes on the lighter side you’ll give it like two more minutes it took just about another minute or so so what i’m going to do i’m just going to make a well in here i’m just going to put it aside you don’t have to take it out of the pot just go like this and a little bit of oil i just say i’m going to throw the onions and peppers in we’re going to let this fry a little bit here until it gets golden brown or until the onion softens up so you can get the sweetness coming from it the onions have been trying to slice for two minutes or so i’m just gonna mix everything in here like this and then add my rice [Music] oh you can turn the heat on medium to low at this point if you want just let it dry a little bit here maybe like a two minutes or so should be fine i i don’t know if you notice but i didn’t add any salt to my swordfish fry right because the sauce had the saltfish had enough sauce for the rice and i did add a little bit of salt to the rice when i was boiling it so for me it’s perfect but you can taste it and see if you need to add salt to it let it fry for about maybe two or three minutes not much it’s ready as it is here whole fish fry rice easy simple delicious here is my saltfish fried rice if you try it out let me know in the comments below and don’t forget to like subscribe and share thanks for watching

For this recipe you will need:
5 cups cooked parboiled rice
1/2lb of saltfish bits
1 medium onion chopped
2 pimento peppers
1 hot pepper
1/4 cup of oil to fry the salt fish or as much or as little oil as you would like to fry the saltfish
*garlic is optional!

  1. Thanks for sharing. I make this a great deal the only difference are….I add garlic and hot pepper. I also fry the salt fish in coconut oil and toss some broccoli florets in at the end. So delicious!!

  2. Hi mom’s i remember my mom cooking salt fish fried rice and salt fish and tomatoes everything you can cook with it but I don’t because I have vegetarian people in my house enjoy your week and stay safe bye.
