Delicious And Easy: How To Make Seared Sesame Tuna Just Like A Restaurant!
forget the take out my sesame seared tuna with ginger soy dipping sauce is restaurant quality made at [Music] home hi everyone welcome to let’s celebrate TV I’m your host Peter Lee today our celebration is all about fish but not just any fish we’re celebrating tuna today we’re going going to make my Sesame sear tuna with a ginger soy dipping sauce I love tuna it’s readily available most people though only get it out at restaurants I like to cook it at home and you can get it in your supermarkets it’s very easy to cook but most people overcook it so I’m going to show you how to not do that today let’s start with the sauce I have a little Bowl here and we’re going to start out with some soy sauce 2 oz 60 M of soy sauce now I like the low sodium kind it’s a little more rounded in flavor than regular soy sauce but use what you like this goes right in our bowl next up is ginger I’m going to use fresh ginger today and this is what fresh ginger looks like you’ve maybe seen it in the produce section of your grocery store maybe you didn’t know what it was or how to use it but that’s it we just need a half of teaspoon and all I did was I grad this on my micr planer so it’s very finely grated fresh ginger is a little fibrous so you want to get it really finely grated if you can’t find fresh you can use the dried ground ginger and this goes right in I want to add a little sweetness to this we’re going to get that from honey just plain honey whatever you like one tablespoon next up is the flavor bomb toasted sesame oil this is how it comes a little tiny jar you may have seen sesame oil that was lighter in color and called heart healthy and good for frying that’s different this is toasted it’s very very powerful but I’m using it because I want to Echo and enhance the Sesame coating that we’re going to put on our tuna today we only need 1 tblsp last ingredient another flavor bomb this is seasoned rice wine vinegar and you want to get the seasoned kind it comes sweet or seasoned you want the seasoned kind it has salt and aromatics and all kinds of flavors in it it’s very complex and something to keep in your pantry it’s really really good you’d be surprised how often you use it we just need 2 tablesp right in and we’re just going to whisk this to combine just enough so you feel that the honey is dissolved and it looks like it’s all together now you can use this right now you can wrap it up use it later you can keep it in the fridge for a whole week so this is something you can make ahead a time when you’re going to make this dish now let’s talk tuna here’s my tuna I have two wonderful looking AI tuna steaks now I got these in the frozen section of my Supermarket you can get them at the fish cter two but my supermarket has them frozen and they’re all Cova and they’re wonderful all I did was I thawed them for the package instructions and I just took a paper towel and patted off some of the excess liquid that was there we’re going to give these a little bit of salt and pepper on both sides just a little all right our tuna is all seasoned before we get to the crust let’s get our pan heating I need a nice hot pan for this so I’m going to start this out on medium heat and we’ll just let that heat now I am searing and normally I would do that in a cast iron but fish is delicate I’m going to use a nonstick today just for paranoia sake all right back to our fish our tuna is ready let’s talk crust I have here on my plate about four generous tablespoons of sesame seeds now I just have white sesame seeds today if you can find them you can use the black ones you can combine them and make it pretty they taste the same all we need to do is put the tuna in the seeds and they’ll stick to it like a crust all sides and edges just like that that doesn’t have to be perfect all right let’s do the other one don’t be worried while you’re doing this if some of them fall off it’s fine our pan is heating nicely I’m going to use some oil and today I’m using grape seed oil because this is for high temperature cooking it’s a neutral flavored we just need tablespoon or so and we’re just going to let this heat until the oil starts to Shimmer my oil is starting to Shimmer I’m going to grab a couple of these sesame seeds pop them in and they are sizzling and popping right away so I think it’s safe to put the tuna in gently just like this that’s what you want to hear we’re going to let this go for exactly 1 minute and 30 seconds [Music] all right my tuna is ready to flip now I put it in I did not touch it I didn’t move it you just leave it [Music] alone beautiful [Music] golden all right we’re going to let this go for one more minute that’s what we want nice rare tuna all right it’s time to remove these from the [Music] pan and we want to just let these rest for three maybe 5 minutes all right here we are it’s been about 5 minutes my tuna is rested let’s give a little taste I’m just going to take this first one here and we’re going to give it a cut right here beautiful beautiful you see the sear Mark and then nice and red and rare and juicy in here let’s have a couple slices all right here’s our lovely rare tuna and and then here’s that dipping sauce we made earlier I can’t wait to give this a taste break off a little bite right in mm actually really good tuna full of flavor fresh it’s tender and juicy and and that Sesame crust has nice little nuttiness to it but then the sauce wow there’s salt there’s sweetness there’s Tang there’s more Sesame flavor from that sesame oil this is one of these great dishes that could be a main meal or you could turn into an appetizer let me show you how I have some little Asian spoons if you can find these they’re really not expensive and there’s such a fun way to Plate things so I’m going to cut some tuna into a little bite-sized Cube just about like that I’m going to put one on each spoon then I’m going to drizzle some of this wonderful sauce on each bite just like that I have some scallions just the green part that I cut up and we’ll give each one a couple of scallions for prettiness sake and a little extra flavor why not just like that I also have some Wasabi here if people want to make it a little spicier so let’s give this a taste with just a tiny bit of Wasabi this is powerful wonderful that Wasabi gives a nice little kick too time to wash it down with Nothing is easier and more delicious than Sesame Encrusted Ahi Tuna, which has been lightly seared and served rare with tangy ginger soy dipping sauce. Encrusting the tuna with sesame seeds provides an Asian flair, protecting the fish during the sear and adding a nutty flavor as the seeds toast.
=== 🍽🍸🥩 RECIPE ===
Tuna steaks (2-4}
4 Tablespoons white sesame seeds
1 tablespoon vegetable oil
Salt & Pepper
Large skillet
Ginger soy dipping sauce:
2 ounces (60ml) soy sauce
1/2 teaspoon fresh ginger, grated on a rasp
1 tablespoon honey
1 tablespoon toasted sesame oil
2 tablespoons seasoned rice wine vinegar
Mix all ingredients in a small bowl. Can be used immediately or covered tightly and used later. Store in the refrigerator for up to one week.
Make the sauce first and set aside.
Pat the tuna with paper towels to dry off any excess liquid. Season with salt & pepper on both sides.
Preheat the skillet over a medium heat. While the skillet is heating, spread the sesame seeds in a shallow dish.
Season the tuna steaks with salt and pepper. Then, dip the sides of the tuna into the sesame seeds to form a crust.
When the pan is hot, add the oil and allow it to heat until it shimmers. Add the tuna steaks. Sear for 1 minute and 30 seconds. Flip the tuna and sear the other side for just 1 minute. After each side is seared, remove it from the pan and allow it to rest for 5 minutes.
Do Not Overcook!!! Tuna should still be red and rare inside. Serve with dipping sauce.

Sounds like a great recipe, and I love the phrase, "Just for paranoia's sake." I think most people overcook any fish. . .They must think it is pork raised in 1955. I think that one of the unrecognized keys to Asian cooking is "under doing it." A tiny bit is just right—one spoonful of sauce
