On today’s episode we are cooking bread and breakfast by making LIGHT & FLUFFY FRENCH TOAST or as we call it in Southeast Louisiana, PAIN PERDU meaning lost bread. This is an easy breakfast or brunch recipe that everyone in the family can enjoy. Our French toast recipe is made with thick sliced, high-quality bread, coconut milk and uses only one egg. To finish it off we top our pain perdu with confectioner’s sugar (Swerve substitute used in this video) and in-season fresh fruits.

LIGHT & FLUFFY FRENCH TOAST “PAIN PERDU” RECIPE
high-quality bread, sliced thick
1 can unsweetened coconut milk
1 egg (or 1/4 cup egg beaters)
1 Tbsp vanilla extract
1 tsp orange extract
zest of 1 orange
1 tsp sugar (or substitute)
1/4 tsp salt
1/2 tsp ground cinnamon
butter, to coat skillet or griddle with while cooking, to taste
confectioner’s sugar (or substitute), for garnish (optional)
in-season fresh fruits, for garnish (optional)
serve with maple syrup, honey or sugar-free syrup
1. In a shallow pan combine coconut milk, egg, vanilla extract, orange extract, orange zest, sugar (or substitute), salt and cinnamon. Allow it to rest 10 minutes.
2. Line a sheet pan with foil. Dip each slice of bread, on both sides, in the batter. Place coated bread on sheet pan and set aside.
3. Heat a cast iron skillet or griddle to medium heat. Coat with butter. Place bread, but do not crowd into skillet or on griddle. Allow bread to cook to a golden-brown color, around 2 – 3 minutes per side. Check while cooking to determine when color is achieved. Remove bread from heat when done. Garnish with confectioner’s sugar and in-season fresh fruit (optional). Serve while hot.
While filming, it was a severe weather day in Southeast Louisiana. We had to take a break during filming to go to our safe space due to tornado warnings. Once the weather improved and we resumed filming, the smell of French toast cooking on the stove filled the kitchen and reminded me of why French toast has always been one of my favorite comfort breakfast foods. They were hit with an EF2 tornado and are coming together as a community, rebuilding and recovering.
