– Ingredients:
6 Shiitake Mushrooms, without stems
ยฝ Zucchini, thinly sliced
ยฝ lb Short Rib, thinly sliced
1 cup Korean Pancake Mix
1 Dozen Egg Yolks, beaten
Cooking Oil
– Pollack Fillet Jeon:
1 pk TongTongBay Frozen Sliced Pollack Fillet
ยฝ tsp Salt
4 pinches Black Pepper Powder
– Korean Mini Meat Patties & Sesame Leaf Jeon:
4 Sesame Leaves
12 oz Ground Pork
5 ยฝ oz Ground Beef
3 tbsp Tofu, mashed
2 tbsp Scallion, chopped
2 tbsp Carrots, chopped
1 ยฝ tbsp Flour
ยผ tsp Salt
ยผ tsp Black Pepper Powder
– Sanjuk Jeon:
8 Crab Sticks, cut into 2 ยผ inches
3 Scallions, cut into 2 ยผ inches
4 strips Kimbap Ham, cut into 2 ยผ inches
3 King Oyster Mushrooms, cut into the same size as crab sticks
– Korean Chive Pancake:
7 ยพ oz Chives, cut into 2 inches
2 oz Carrot, shredded
3 Korean Green Chili Peppers, thinly sliced
1 Red Chili Peppers, thinly sliced
1 ยฝ cup Korean Pancake Powder
1 ยฝ cup Water
1 tbsp Tuna Fish Sauce
ยฝ tbsp Garlic Powder
1 cup TongTongBay Seafood Mix, thawed
1. First, thaw the frozen pollack slices and place them on some paper towels for 5 minutes to remove any excess moisture. Then, season them with salt and pepper and set them aside.
2. Next, combine ground pork, ground beef, mashed tofu, flour, carrots, scallions, garlic powder, black pepper, and salt. Make 9 small meat patties with half of this mixture. Sprinkle some frying mix on a clean sesame leaf, fill it with half of the meat mixture, and fold it over. Prepare 4 of them in total.
3. String ingredients onto 3 ยฝ inch long skewers according to the following pattern: imitation crab meat, shiitake mushroom, ham, shiitake mushroom, and imitation crab meat. Make 8 sanjuk jeons in total.
4. In a large bowl, combine the chive pancake ingredients thoroughly. Set it aside.
5. Dredge the prepared pancake ingredients (zucchini slices, shiitake mushrooms, short rib slices, Pollack fillet slices from step 1, small meat patties and filled sesame leaves from step 2, sanjuks from step 3) with the frying mix, shake off any excess, then coat them with beaten egg yolk.
6. Heat cooking oil in a frying pan and panfry each of the ingredients including the chive pancake mix from step 4 until fully cooked. For the zucchini ones, top them with Korean daisy crown and red chili pepper slices.
7. When everything is cooked, serve with soy sauce, pair with Korean Makgulli and celebrate Korean Chuseok with your loved ones!
