A delicious simple easy curry that I would cook every week. This is an inspiration for southeastern African curry that can be done with chicken or shrimp. You will find recipe variations that include lemon juice and those that leave it out.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, peeled and minced
1 bay leaf
2 tomatoes
2 teaspoons curry powder (a good quality curry is a must)
⅛ teaspoon salt
2 chicken breasts, cut into pieces
3 potatoes, peeled washed, and cut
1 can of unsweetened coconut milk (14ounce can)
1 lemon, juiced (optional)
Directions
Heat olive oil in a large, pan over medium heat. Stir in the onion, and garlic, until the onions are translucent. Add bay leaf, and chopped tomatoes and cook 5 minutes until softened.
Add chicken breast, curry powder, and salt into the pan stir, and cook for about 5 minutes stirring until the chicken breast is no longer pink and its juices run clear (no need for water). Add the potatoes and cook until they are tender for about 15 minutes or more.
Reduce the heat on low heat then add the unsweetened coconut milk and cook for an additional 10 minutes on low heat. Mix in lemon juice if you want before or after serving (optional).
Serve in deep bowls with rice. Enjoy
