A Slow Autumn Day in Greece ๐| Making Lemon Chicken Soup on a Rainy Day
Hey everyone โฅ๏ธ it’s like I’m in a contest of who can carry the most fridge contents in one go ๐
I don’t like wasting a trip to the fridge for nothing ๐ *piece of butter that won’t let go* While the eggs are cooking I’ll prepare the sauce This new bottle of ketchup is too stubborn smacking some sense into it 2tbsp mayonnaise, 1 tbsp ketchup, 1 tbsp mustard This simple sauce can turn a plain sandwich interesting Removing the outer leaves of the lettuce And I’ll give it a refreshing shower ๐ Operating carefully on an avocado there’s no better thing than opening a full avocado like this ๐๐ฅ *beat it senseless* adding some salt and it’s done Saving the rest of it in the fridge We’re a little late for work but since we work on our fig farm there aren’t very strict working hours why is this sauerkraut so hard to open now that I’m in a hurry (please take care of your fingers lady) This felt like a workout ๐๏ธโโ๏ธ Adding the sauerkraut I worked hard for directly on the sauce Along with two pieces of cheddar cheese, turkey and the eggs my inspiration for this sandwich was simple *use what’s in the fridge* having a green party with the avocado and almost half a head of lettuce suddenly this sandwich feels so healthy ๐งโโ๏ธ๐ฅ Many of you have asked about this sandwich wrap I use It’s the GLAD press N’ seal and you’ll find it in the video’s description I’m folding it like folding a diaper
(almost all my friends have kids, don’t mind me) Lately we’ve been eating out for breakfast every day but today I stood my ground (to myself) and said no more Packing these up in a round bowl (strange) and off we go! ๐โโ One of my cats is eating and the other must’ve had a tiring night Sleep well, we’ll go to work for you โฅ๏ธ We took a different route today for a change First thing I do is taking out our breakfast, I won’t waste another minute Mr P and I love the calmness of the morning in nature This sandwich is so moist and flavorful It’s filling on the stomach yet light in texture ๐ง๐ปโโ๏ธ: did you come up with this? ๐ฑ๐ปโโ๏ธ: mm! When I’m eating all I can master is a mm haha My father-in-law bought some new veggies to plant for winter Since I didn’t have a good experience with being an urban farmer this summer I’ll be happy to observe a master in the field work The necessary part is removing rocks, digging and adding manure Evening out the dirt is somehow very pleasing to see A butterfly came by to say hello โฅ๏ธ (she will proceed to eat our crop but I have no problem with it) We’ll be planting broccoli, lettuce, cabbage, cauliflower and radishes I’m not sure which is which but I happily plant themโฅ๏ธ Mr P is working non-stop doing all the work needed Please grow strong and healthy โฅ๏ธ๐ฑ One section is finished already I’ve stuck my phone in the dirt to film, I hope you like this haha Working together makes work go by so fast We planted so much already ๐ฅฐ I can’t wait until we have homegrown produce again Ms Socks is eating and finds our behavior pretty strange haha she’ll allow it this time.. Keep a mental note of how this looks, because in no time this will look like a jungle My father-in-law will plant some peas too The seeds are coated in a pink film to be protected I just observe (and almost step on the freshly planted broccoli ๐ฎโ๐จ) From the summer produce I’ll pick the very last eggplants ๐ They require some strength to get them but I’ll do what’s necessary hehe Let’s hold on to this summer a little bit longer with the help of the eggplants ๐ Work today was so much fun with all the planting Let’s go home now to rest and eat good food ๐ I took a bath and I thought of an interesting combination to try I’ll make the eggplants I picked up along with a crispy beef schnitzel (hopefully) I cut a thin slice of the eggplant so it doesn’t move and I’m cutting thin pieces of it, but not all the way through a cute mini accordion eggplant Preparing the olive oil I’ll use to rub on the eggplants I’ll season it with oregano, thyme and smoked paprika This is the Hungarian paprika my sister-in-law gifted us from her trip but it will expire this month! (I’m devastated..) I’ll rub the oil around the eggplants and into the cuts I want the seasoning to go everywhere You should add some salt (I forgot) and bake it at 200C until cooked through Dressing the cutting board with cling film and paper towels I asked for a top round schnitzel that’s tender when frying Since I don’t need a bigger mess while frying I’ll use these disposable aluminum trays that I saved and I’ll make a frying preparation station container 1: 2 cups of flour, container 2:
4 eggs and evaporated milk, container 3: breadcrumbs and panko bread This will make the process more tidy and easy I have these Japanese breadcrumbs that are called panko It’s a more coarse kind of breadcrumb Also hello to all my new Japanese subscribers โฅ๏ธ season with salt, pepper, thyme, and of course the smoked paprika I’ll use it on everything this month ๐ญ I forgot to season the beef with some salt and pepper on both sides Coat the beef first in flour, it needs to go everywhere (not like mine ๐ญ) and then it’ll take a quick dip into the egg Final breading station: breadcrumb coating Crossing my fingers this will stay on ๐ค I’ve made breaded chicken before and it was a great hit but I’ve never tried it with beef it won’t be too different, right? I hope not.. *defeated by the temperature* Listen to me, the oil NEEDS to be very hot, or else the coating won’t stay on don’t look at what’s about to happen to you.. I added them one by one after the first two failed ones (I hid them on purpose) After a mild mental breakdown everything looks well haha The oil temperature could mess up all the hard work I got two fresh mozzarella and I’ll cut them thinly I ended up cutting them lengthwise too, as my eggplants are too small They are fresh out from the oven but apparently I can’t feel the heat on my fingers? I’ll bake them again for at least 10 minutes, or until the cheese melts I made mashed potatoes to pair with the cutlets Why can’t I plate the mashed potatoes beautifully… The cutlets save the visuals hehe This is tomato sauce I had leftover I warmed it up in a pan The eggplants look so cheesy and perfect This dish screams for some beer on the side Starting the meal with a sip of beer Mr P loves schnitzel so I hope I got it right Thankfully he loves it, after messing up the first two I was worried I failed haha Let’s see if I got the pairing right too The eggplants look so good, how I wish I had some now (editing me) This is such a good pairing of dishes I’m carefully creating a bite with everything in it The eggplants are so moist and tasty like this It’s such an easy and unexpected dish It’s-makes-you-wanna-dance good They reheat so well as leftovers too And the schnitzel tastes amazing It turned out crispy and delicious I’m sad these are the last eggplants, I would like to have them again Eating my last bite and I would like to have more but I’m full Another Day First thing in the morning we run into our granny neighborโฆ
my introverted self trying to vanish like a ninja After surviving the morning attack, I’ll be enjoying this rainy day This is the first rain of the fall so it feels so cozy Our little tradition is to buy freshly baked grape must cookies And enjoy them with hot coffee happily They just got out of the oven and are too hot ๐ฎโ๐จ These are the specialty of this bakery I hold it with a paper towel as my hands aren’t clean, they are sooo good ๐ฎโ๐จ๐คค The weather forecast said it will rain in the afternoon but it seems like they’ll be wrong It’s quiet and then, there’s a sudden wind Morning hugs to fight the cold Playing it cool by doing some light hand exercises haha We need to work but it’s so compelling to look at this changed scenery I think the rain will help them to grow stronger now Somehow they’re already taller? It’s so beautiful to have some new, even this small, greenery around you I’m wearing three layers of clothing because it’s so cold here in the morning The hot coffee feels like a gentle caress to my soul (look at me, being poetic over coffee haha) As we’re working there’s a sudden rustling sound of light rain dropping It’s not even visible on camera but it’s here The smell of the ground getting wet is so soothing Even if I love summer these last few years Rain will always be my favorite thing We’ll stop the fig picking, due to the rain I’ll just quickly do some receipt work and then we’ll go It gets moodier out and colder as time goes by I’ll drink some of my lukewarm coffee for now ๐ญ Even like this I’m enjoying it There’s no better day to have a camera than when it rains Another yearly tradition we have for the first rain Is to go for a long drive Everything looks incredibly beautiful in this setting We went to the sea, to see it moody The sound of the rain dropping in the water is so calming I’m taking some pictures and enjoying this view The rain isn’t falling too heavily, just a little drizzle The drive becomes 10 times better as we spot some horses Back home and I fed our sweet Little Lady Always eager to find a tasty treat The flowers look so bright today and you already know what I’ll cook..๐ฒ๐คค Today I knew it would rain, but I thought it was for half an hour and then stop but because it rains a lot and it’s cold I’ll make chicken soup ๐ฒ A subscriber has asked me for an avgolemono chicken soup for a year now it’s finally the time ๐
Avgolemono chicken soup is made with a dressing of eggs and lemon In my house we never ate it like this because my mom didn’t like it In the house of Mr P is the same too ๐
So this might be the second time we eat it like this But usually, people eat this whenever there’s some cold going on to help you feel stronger I’ll prepare veggies for the soup base and then for the final soup (I hope I explained it well, but you’ll see, be patient!) I roughly chop one onion, and then thinly slice another Two roughly chopped carrots for the broth I love adding lots of carrots in soups ๐ฅ they have the perfect sweet flavor I like I’ll cut one big carrot into cubes I want everything in the soup to be of similar size I’ll add a garlic clove, but it’s not traditionally there I’ll cut two large celery stems and leaves in three pieces In this soup, it’s best to add chicken with bones, as it’s more flavorful and nutritious But Mr P and I prefer eating only chicken breast I’ll season it with salt, pepper, thyme and about ten whole spices I’m searing the chicken in olive oil of course, until it gets some color After browning both sides, I’ll stir fry the veggies too I’ll add water to cover the chicken and vegetables I’m pouring in a chicken stock for richness and I’ll cook it for an hour Sorry if I startled you, I was just sightseeing the rainy view This view, front and back is the cosiest thing I’ll add a bay leaf, because it helps cover the chicken smell too The good thing with soup, is you can add things as you go Some time ago, I had bought a large loaf of bread And what was left, I’ve put in the freezer I’ll let it defrost until I use it I’m thinking of turning it into a cheesy garlic bread Soup alone is never very filling I’ll prepare the garlic butter to have it on hand adding a single garlic clove to keep the smell to a minimum I love garlic bread so much, in all forms and sizes I’ll work hard for you, my garlic bread The chicken is tender so I can strain the soup This broth alone will be so delicious But now I’ll make it even better ๐โโ๏ธ Stir fry the onion and carrot for the soup with a bit of salt Add the prepared broth in I’ll add a bit of water too I’ll let it boil for 10 minutes and then I’ll add the rice This soup is easy, you just need to clean one more pot Sometimes even this sounds difficult, but it’s worth it in the end ๐ช I’ll shred this chicken with two forks and with the power of editing I’m done! I’ll add a little more rice than 1/3 of a cup You can even add 1/3 and I think it’ll be fine too Too much rice and the soup will thicken too much After 10 minutes, I’ll put the chicken back inside And immediately after the rice While the rice cooks in the soup, it’s time to prepare the garlic bread Smothering with garlic butter each slice And then I’m adding as much cheese as it’ll hold Any type of cheese will be alright for me Bake until cheese is melty Time to taste test the soup๐ it lacks some salt and pepper but even like this it’s delicious Iโll let the soup cool down a bit, just enough for the boiling to stop, but still warm so that when I add the egg-lemon mixture it wonโt curdle All my preparations are slowly coming together The garlic bread looks simple but it raises my appetite more I can’t wait to have a little taste My fingerprints are non-existent at this rate I don’t have some parsley to decorate it, so I’ll use oregano I think I could add more cheese..if only I had some mozzarella on hand For the avgolemono sauce I needed the juice of two lemons and two eggs But these lemons are too dry So I ended up using 4 of them.. I feel exhausted at this point ๐ Add the juice to a large bowl and crack the two eggs in it Stir them well as the lemon slightly cooks the egg and now the most nerve-wracking part Ladle by ladle combine the hot broth into the egg while stirring It’s not difficult, it just needs some patience I almost poured all the soup liquid in here Then add it all back into the soup and stir carefully I’ll leave the soup on the hot burner for 10 more minutes This soup is also safe to be reheated The lemon and egg sauce helps the soup thicken up and it also becomes even more nutritious I’ve put the garlic bread into the oven to stay warm, but it got browned ๐
That’s the sight I crave on a cozy rainy day Taking some pictures for Instagram and bon appรฉtit Everyone says how good this is, but I’m worried if it lacks anything haha Everyone is satisfied so I can relax and enjoy this This soup is so good, I’m thinking what I was missing all along.. The texture is thick yet runny, it’s hard to explain My version might have some extra steps, but it’s worth it It really warmed my soul and body This is so good guys My fit for now, shorts with sweater We’re going grocery shopping and it’s sunny out? I swear to you this is the same day ๐
Taking our ride๐ Lately I’m on a cheddar cheese hype, so let’s get it 4 kefir milks for good gut bacteria Oh the monster cake caught my eye! but close to it it’s something even cuter? This fajita mix seems very handy We found the chia seeds Wasa, so we need to get it On the higher shelf is the protein granola we like, so good on yogurt ๐คฃ this looks so funny to me they look delicious but we already bought some cookies (responsible adult) I highly recommend this shampoo and conditioner,
smells amazing and the hair is so soft I need the bigger muffin tray, so stay back Finally a smaller sized whisk, as mine broke I tried getting some sweet potatoes..but ended up causing havoc I ended up getting the cubed beets instead of the whole ones avocado and baby arugula should always be in my fridge Two packets of jasmine rice that we like This liquor box is so cool! This vitamin water is so good I’m feeling pretty thirsty all of a sudden These are oregano potato chips and are a must Bagging the groceries quickly to go home We were hungry so we bought some things unplanned One thing has stuck in my mind though These little spooky cuties In Greece we don’t celebrate Halloween but I love this holiday We also got some good quality honey And I’m so happy with this new whisk, I’ll use it right away Why a simple thing like getting nice groceries puts me in a good mood haha I’ll make these viral sheet pan pancakes I’ll do an apple pie version that looked sensational but as the time progressed, I realized something.. This recipe has no sugar in it?! I’ll trust it, because maybe the apples will release some sweetness?? I’ll continue but my heart is scared Why do they always make the flour packaging so hard to open?!! I’m also trying to be as exact as possible Add the water and the flour in three parts Maybe more water is needed in the end For me it ended up being just right The preferred consistency The recipe says to add 2 apples, but I’ll use three since mine are small 2 eggs, 250 g yogurt, 250 g flour, 250 ml water, Vanilla extract,
cinnamon, 2 grated apples (walnuts and honey for decorating) If I were to make it again I would add at least 60 g of sugar (or honey) in the batter 1/3 of the apple should be reserved, so I’ll cut it into cubes You can grate all of these and not bother with any cutting at all Combining the apple into the batter And I’ll add more cinnamon to it You should cover a large pan with parchment paper Because I want my pancake to turn out thin, I used the largest pan I have In a smaller pan it would be thicker I’m wondering how it’ll go as it has no sugar and bake at 200ยฐC for 25-30 minutes I can say it looks very cute I also put on my pajamas, now that it’s night it’s somehow hotter in the house having a meeting with myself on how to cut this Drizzling a lot of this thick honey on along with some cinnamon and walnuts I’ve seen this type of thing go around the internet for some time now But seeing the apple pie version spoke to me I hope it didn’t deceive me haha I’ll add a little yogurt on two pieces This was so easy to prepare Let’s go! I’m introducing Mr P to this new thing I made Two disappointed mm’s follow the first bite.. This is very good in texture but it lacks sugar My mother-in-law added powdered sugar on top and it was completely transformed Even if we don’t like it a lot, it quickly disappears? I thought it was a special occasion and then I remembered it's in fact Saturday today ๐๐คฃ I love to singsong the intro before it even starts to play, it puts me in such a good mood! I really need to give avocado a second chance, your sandwiches always look so hearty and filling!! I'm also sad eggplant season is already done, it's one of my favourite veggies and when baked with mozzarella and tomato it's so addicting! I don't remember if you have already made an eggplant schnitzel before with tomato sauce but I really recommend it! On the topic of schnitzel, I've never seen one made with beef! How did you like it compared to chicken/turkey? The weather also keeps changing here! In the morning we have 6ยบC already ๐ On the good side I'm already planning stews and mug cakes ๐ I made avgolemono once but I also prefer soup without egg like your family ๐ It's good but different! I've seen the sheet tray pancakes too but I never ended up making them, although now I'm craving some just because you rolled them (best way to eat them ๐) you should try pumpkin pancakes! I've already bulked on Hokkaido /Red kuri pumpkin for sweet and savoury dishes, I hope you can find it there too cause it's absolutely amazing! You don't have to peel it either ๐ I forgot to mention I made your aunt's baked chicken recipe tonight and it was a success! Everything you make looks so delicious! We are getting so much rain today, so your cozy recipes look very tempting! I want to try making the soup and eggplant. If the pancake recipe is an American version, usually the sweetness comes from toppings such as maple syrup, jam or honey, but many people add a tablespoon of sugar or honey to the batter. Iโm in a place right now, the desert of Canada. It reminds me of your area, there are grapes for wine, apple orchards, and so many plants Iโve never seen before. I even saw Russian olive trees.
