Introducing a healthy salad that combines soft and sweet sweet potatoes and crunchy kiriboshi daikon radish. Lightly wash the kiriboshi daikon radish and soak it in water. Squeeze out the water and cut it into bite-sized pieces. Kiriboshi daikon radish is a nutritious ingredient whose calcium and dietary fiber content increases several times when it is dried. Cut the sweet potato into 1cm cubes and soak in water to remove the bitterness. Using it with the skin also provides dietary fiber and polyphenols. Let the frozen edamame thaw naturally. Place the sweet potato in a heat-resistant container and wrap it in plastic wrap. Microwave at 600W for 3-4 minutes. Once it is soft enough to easily insert a bamboo skewer, Let cool slightly and mix the seasonings together. Adding vinegar and sesame to the mayonnaise gives it a rich flavor with a refreshing aftertaste. Add the kiriboshi daikon, sweet potato, and edamame beans and mix gently. Let it sit in the refrigerator for about half a day to allow the flavors to blend. This is a great side dish for making ahead or for bento lunches. Serve in a bowl and sprinkle with black pepper and toasted sesame seeds to finish. You can enjoy the sweetness of the sweet potato, the crunch of the kiriboshi daikon, and the color of the edamame all at once in this nutritious side dish. 【材料(2〜3人分)】
• さつまいも … 150g
• 切り干し大根 … 10g(乾燥)
• 冷凍枝豆(さやなし)… 大さじ3(30〜40g)
• いりごま・ブラックペッパー…適量(お好みで)
• マヨネーズ … 大さじ2
• 白すりごま … 大さじ1
• 醤油 … 小さじ1
• 酢 … 小さじ1
【作り方】
1. 切り干し大根を戻して水気をしぼり、枝豆は解凍。
2. さつまいもは角切りにして水にさらし、ラップしてレンジ加熱(600Wで3〜4分)。
3. ごまマヨ調味料で和えて完成!
