How To Make Vegetable Dumplings
good morning welcome to ask Cafe online I’m sorry for delay this morning but here we are again we got we’re able to get it you know running and fix again so uh my name is Chef CER again and today we’re going to be making some uh vegetable dumplings this is a nice vegetarian dish for those of you that you know are vegetarian is a nice tasty simple dish to make and we’re going to start by you know I got some uh tofu here this is uh soybean you know cheese kind of it’s made with soy uh milk and one of these days I’m going to show you how to make you know tofu fresh here at the studio it’s really easy but today I had to buy it and uh what do you want to do when you get it and know it comes in liquids moist so you want to split it in half like you know vertical way so and then you want to put it put some paper towels on it put some more on top put some on another pan to squeeze some the liquid out you don’t want to have it too moist this is little you know nice and dry so about 20 to a half an hour like that and it’s going to soak a lot of moisture in the paper towels and it’s going to be you know little easier to to work with it’s not as uh it’s moist and we’re going to start by chopping it up some uh I got some Nappa cabbage here this a nice softer cabbage it looks like a lettuce like a Roma lettuce but it’s really nice and soft and it’s really you know good to like cook with this uh for steel fries is actually really nice so we’re going to really you know cut up really fine about half a cup and this is going to be just a plain vegetarian you know dumpling we’re going to steam them which is really you know healthy as well and you’re going to be able to do this very easy I mean tofu has been around for over 2,000 years it began you know Han dinast in China and you know nowadays it’s you know soy it’s really you know popular it’s a good source of protein and really by itself doesn’t have a lot of flavor to be honest with you normally we marinate it with some other ingredients you know like sauces or like you know marinades and this uh otherwise by itself is really Bland don’t really have a lot of taste at all just really you know really Bland like I said so you have to add some more ingredients so I got some shredded carrots here my cabbage some fine and dice red peppers some uh Ginger fresh just smells wonderful we’re going to add some uh I’m going to dice my to here in little small thighs and it’s it’s like really you know it looks like uh really soft and you can use this to make you know sweet desserts too as well as Savory dishes but again it’s really one of those things that uh it’s easy to make I’m going to show you how to make it one of these days here I’m going to do you know presentation we’re going to make some uh homemade tofl so you guys can you know try to do it at home too it’s really easy and if you guys uh feel free to ask questions along the way I really like when you guys you know ask your questions okay we do want about a half a pound of tofu here you know I have a little more so I’m going to cut up a little more it’s really soft smooth and you can buy this already at the store and uh and you want to like have it for a sale it’s great too you want to marinate it though you might you know put some kind of dressing and make it marinate whatever it’s it’s it’s wonderful cuz by itself world is not that you know flavorful like I said before so we want to add some some flavor to it I got a few more ingredients I got to add in here clean my B I’m going to add some uh some uh green onions here about you know tablespoon of s green onions this is really easy in the meantime I got my steamer going I got in a low so it starts to warm up that way I don’t waste a lot of time you guys can do that too at home you know you could you know start you know warm it up if you got one of this it’s fine otherwise you can use you know pan with a perforated pan on top like we do at restaurants I mean you can make you know steam at home you don’t have to go out and spend a lot of money you know you can make your own it’s really easy as long as you got a perforated pan in the lid you know to trap the steam it will work so you know like for cooking you don’t need all the fancy stuff that you see sometimes on TV you can make your own equipment at home sometimes you know it’s very simple okay so I got most of my ingredients here I got a few more I got to add over here also we got to put some uh salt and pepper here cuz like I said the tofu is not really tasty at all I got some soy sauce I’m going to put in here as well and you guys can add different uh types of vegetables you don’t have to use what I’m using right now cuz I mean if you guys don’t like some of the stuff you can always changes I you know told you guys before the main things to follow the cooking process is some soil so my SES is here I’m sorry I already put some soy in there and and that over here is some hoiston sauce a sweeter sauce now we have all our stuff you know done here we’re going to now we’re going to add one egg that kind of is going to bring all the mixture together when it Cooks okay now we have our mixture here it’s going to go really easy you don’t want to break down the tof you want to kind of have a little bigger pieces and it smells wonderful okay now that we have our mixture we can start filling up our you know wanton skins put this to the side here some room here what I got here I got some uh wanton wrappers you can buy packs like this they already done for you and the good thing is when you like making this make sure you keep them nice and moist you open the package right to like if you’re going to take a long time to do them you know just just uh kind of wrap them or put a moist towel over the top that way you they don’t get dried on you I’m going to make it really quick and I’m going to lay them flatten the cutting barard that way I can make more than one at a time you guys can do the same thing too if you like you know it’s easier that way if you make them you know more than once at a time do a few more okay close the package back up so it don’t dry it up on me okay I’m going put a little and be careful that not to put too much otherwise it’s going to open up you want to be able to seal this uh wrappers really nice so puts in the center then we’re going to fold them up I’m going to crank the heat on my steamer so it starts to you know really warm up now cuz I’m going to be cooking this really soon and it take about 10 minutes to to get done really you know fast and then you can use uh any kind of sauce to serve them you can buy something already made you can make something like a sweet and sour sauce today I made a uh water Crest puree and I’m going to be using the chili sauce too so it’s kind of something different now got to moist the edges of this uh wons so we fold them over like this pinch this the sides together like this that way they could seal real nice okay put like this you can see you can make a bunch of them at a time and it’s kind of easy Once you fold them over you know you you put the F in the center you you know it goes PR quick you know and again you can do a different kind of feel if you don’t like what I’m doing here you can also change it you know find different vegetables but this or you can also you know well this is vegetarian but you can do meat if you want you know grind some chicken or some pork I’ll pinch the size like this so they kind of stick together and sometimes you if you put too much kind of comes out you don’t want to put too much filling in there cuz you know you don’t want them to open up when cook them you can see this what takes the longest to make them you know close them up and make sure they’re done right they don’t open up this thing is going pretty nice I’m going turn it down the water is going to run out add a little more water here as you can see it’s really simple to make this things you don’t want to get your hands to it cuz otherwise it sticks to your hands too and they open up when you pull your fingers apart we’re almost done here we’re going to cook a few my steamer is kind of small but if you guys have a big one you can make this all you know the big batch and then you you know put them all at once but since mine’s kind of tiny I’m going to have to cook a few at a time so but if you guys have a bigger one you might be able to cook you a lot more that I I can fit in here mine which is you know but if you got a little one you can you know cook a batch and keep making them you know like I am going to do right now you know cook one batch take them out and then you you know do more let’s see got one more here to do then we want to put them in the steamer and these things dry real quick and then they crack if you like Let Them Sit too long in the table you know they they really you know they dry pretty fast so you got to be careful when we do that okay oops it’s pretty hot here got two layers I’m going to put some in the bottom layer and we want to spray this uh little basket so they don’t stick in the bottom I’m going to put a little cooking spray just uh that way they don’t stick to the bottom of the steamer when we put them in there and kind of stand them up here this okay now I got spray this over here or you can also put like a little piece of parchment paper on the little on the basket that way they don’t uh the wrong way here also helps so they don’t stick when you put little parchment paper on the bottom of the steamer got little small pieces and put them in there and uh it helps to keep them from sticking to the to the steamer bottom okay now we’re going to this little thing back in there I’m going to crank the heat back on put the lid in here that way the stem kind of builds up and uh it’s going to be nice and hot in there cuz in about 10 minutes it’s going to take to steam in the meantime we could be making some more you know I’m going to make a few more while those are cooking as you guys can see it’s very quick and easy to make sometimes cooking is SL as hard as it Sims you know to be honest with you once you get you know the basics down you can do a lot of different things in the kitchen you will see this start to get soft from the vinegar and and the soy sauce it’s going to kind of marinate the past it’s going to be nice and soft when you put them there so they won’t be hard to like you know be like crispy like the carrots when you they’re raw they’re crispy now they’re nice and soft from the soy sauce here you go also you guys want uh to kind of request things that you want to see me do you know you can send me an email and I’d be more than happy to you know try to fit a in with a schedule you know I I we can do good and this a nice not healthy you know little appetizer it could be a main Andra if you want whatever it’s really you know simple and you guys can make these things ahead of time and could put them in the refrigerator for a while and then if you you don’t want to steam them right away you can do them later on make sure you put like a little parchment paper on the on the plate I’m going to cook them right away this why I don’t put anything here but you know if you do at home you can put them in the refrigerator keep them in there for a while then when you’re ready to to cook them you know you can take them out and put them in the steamer and they’ll be done in all time so you can also make this uh ahead of time as you can see it’s really I think we have a question over here can you just um okay they want to know what’s inside the filling well I have some uh tofu which is a you know soy uh milk cheese you can say that also I have some um red peppers Nappa cabbage a cilantro green onions I got a egg I have some soy sauce sesame seed oil and a Hoon sauce and salt and pepper you’re going to get the recipe along with this video once it gets uh archived you know if you go to you the YouTube uh video you’re going to be able to print a recipe there and then make it it’s got Direct ction and all all the ingredients as well so you can also go you know and look for all the videos that were done in the past and you can you know do the recipes there too make sure my pot doesn’t want our water you only want to put about like you know an in and a half or little less than an inch of a quarter of an inch of water in the pots you don’t want to go too high cuz otherwise you know you don’t want to go up to the little basket and get them all soaked and wet so be careful when you put water in this in the PO for this to steam this uh you know dumplings I’m going to put them to the side here I’m going to wipe my cutting bar okay so I’m I’m going to chop little onions so we going to use for some garnishes okay got some green onion tops here also like I said made this nice uh sauce I’m going to be using this uh Water Crest puree just vegetarian and I also got chili sauce here a little Asian but you can do it whatever you want if you want to make a different kind of sauce you can do like a sweet and sour with some maybe Peach or something I mean you can do really much whatever you want whatever you have the taste for and I think these things are almost done here I’m going to shut it off here I’m going to bring my the off you can see this nice they cook really fast and take them off it’s kind of warm so be careful when you take come out you can see be careful see sometimes it get stick to each other if you’re not careful like I did here so I’m going to put them in a nice plate here for you little sauce in the bottom it’s going to add a lot of nice color here with the sauce I have here and the okay now we’re going to set one of these things on each little pool of sauce just like that okay see that you guys can do this at home so easy to do know like a little some shreded carrots here I got a little more color some dcon raddish you can make this real nice appetizer if you like you know even the main Entre if you want to so there you go a nice uh vegetable dumplings a nice uh water crisp puree sauce and I uh sweet and sour chili sauce so I want to have you guys try to make this at home I mean as you can see it’s really simple to make and they’re really healthy you know we steam them so there’s no oil involved and you know it’s it’s really easy to to do something like this and uh sometimes you know I know you guys think that there’s stuff that you see might seem complicated but really if you try it really it’s nothing to worry about you guys can do this and then even more I know you can I seen some of you work and you guys do a great job out there I’m really you know enjoying when they grade your your work it’s it’s exciting to see you know from from you guys began to now I mean it’s a great Improvement that’s what I want that’s the whole idea behind this program for you guys to improve and uh just to build on from there you know because you will never stop making beautiful things at home it’s so so easy to do and you guys will always you know do great so thank you for being here this morning I’m really sorry for you know late Learn how to make these steamed veggie dumplings and you’ll never want to order takeout again! Well, that might not be true but these things are the real deal!

Ingredients
8 oz. firm tofu
½ cup grated carrots
½ cup shredded Napa cabbage
2 Tbsp. finely chopped red pepper
2 Tbsp. chopped scallions
2 tsp. minced fresh ginger
1 Tbsp. chopped cilantro
1 Tbsp. soy sauce
1 Tbsp. hoisin sauce
2 Tbsp. sesame oil
1 egg, lightly beaten
1 tsp. kosher salt
¼ tsp. black pepper
30 small wonton wrappers
Non-stick vegetable spray
Directions
1. Cut the tofu in half horizontally and lay between layers of paper towels. Place on a dish, top with another dish, and place a weight on top. Let stand 20 minutes.
2. Cut the tofu into ¼-inch cubes and place in a large mixing bowl. Add the carrots, cabbage, red pepper, scallions, ginger, cilantro, soy sauce, hoisin, sesame oil, egg, salt, and pepper. Lightly stir to combine.
3. Place wonton wrapper in a flat surface, brush the edges of the wrapper lightly with water. Place ½ round teaspoon of the mixture in the center of the wrapper. Shape as desire. Set in a sheet pan and cover with damp cloth. Repeat procedure until all of the filling is gone.
4. Using a steamer of your choice, bring ¼ to ½ inch of water to a simmer over medium heat. Spray the steamer’s surface lightly with non-stick vegetable spray to prevent sticking. Place as many dumplings as will fit into steamer, without touching each other.
5. Cover steamer and steam for 10 to 12 minutes over medium heat. Remove the dumplings from the steamer, server with desire sauce.

can you boil them
If we were not using egg in the mixture would the dumpling still hold well after steaming it? And what technique was used to shred the carrots/radish for decoration?

You don't know how to fold wontons. If you served those in China, you'd be deported. Every Chinese child could do better.
Also, no one uses those baskets in China anymore. Home cooks never did! And non-stick spray is totally unavailable!
Anyway, wontons are seldom steamed!
