Hello, today we are going to prepare the favorite dish of my cat and me: Sardines Moroccan style. First we are going to prepare the marinade. Finely chop the parsley and cilantro Cut the tomatoes into quarters and grate the pulp using the large holes of the grater. Cut a small piece of fresh ginger, and remove the skin using a spoon. Finely grate the ginger. In a large bowl combine: the parsley and cilantro tomato pulp, grated ginger, grated garlic cloves, and olive oil. For the spices we will use: paprika, ground cumin, chili pepper, salt, and pepper, and a pinch of saffron threads. Finally add the lemon juice, and mix all the ingredients together. To clean the sardines, gently scrape the skin towards the head to remove the scales. Wash the sardines with fresh water. With you finger, press through along the belly of the sardine to open it and remove the guts. Now detach the head of the sardine. Then grasp the backbone and carefully lift it up and away to remove it. And here you have a sardine fillet! Place the marinade in a deep plate and place the sardine fillets in the marinade. Make sure they are covered from all sides. Let the sardines marinate for at least 30 minutes. In the meantime, finely chop an onion and slice a tomato and mix them with the leftover marinade. In a baking pan covered with parchment paper, place the onion and tomato slices then put the sardines belly down on top of the onion bed Cover with the rest of the marinade, then place in a preheated oven to 180 C / 360 F and bake for 35 minutes or so. And here you go! The flavors of this dish are to die for. Serve immediately. Make sure your cat does not get in the kitchen at this moment… Hmmm delicious! Bon appetit!

INGREDIENTS:
1 Kilo of sardines, cleaned and cut into filets
2 tomatoes, sliced
1 oinon, sliced

For the chermoula:
½ a bunch of parsley, chopped
½ a bunch of coriander, chopped
2 cloves of garlic, grated
½ tsp sweet paprika
1 tsp ground cumin
1/4 teaspoon chili, chopped
A few threads of saffron
A thumb-sized bit of ginger, peeled
1 ripe tomato, grated
Juice of 1 lemon
Pinch of salt
4 tbsp olive oil

DIRECTIONS:
Step 1: Preparing the Charmoula
1- In a bowl, place all the charmoula ingredients and mix until well integrated. You should get a smooth thick marinade.

Step 2: Marinating the Fish
1-Clean the fish
2- Save some charmoula for the tomatos and onions. Put the flat opened sardine fillets in a large bowl and cover with the chermoula. Turn to coat a couple of times.
3- Lift the sardines one at a time from the marinade and place the fish in a baking pan.

Step 3: Baking the Fish
1- Preheat the oven to 360 F / 180 C.
2- Slice the tomato and onions into thin slices and place in the charmoula bowl, mix well.
3- On a baking pan covered with parchement paper, place the slices of the tomato and onion and top with the fish.
4- Place the fish in the oven and bake for 35-40 minutes or until done (you can test the fish meat, it should be cooked and soft). Do not overbake or the fish will become dry.
Serve immediately.
