田舎で暮らしてみました:東京生まれ・60代・おひとりさま|いちばん簡単なフォカッチャ|素材が生きるシンプルごはん【62歳の暮らしvlog】
I’m at the mountain house. It’s not my vacation home. I’m renting a friend’s house. This is my third year spending summers here. They say it’s gotten hotter around here, but it’s heaven compared to Tokyo. But I don’t come here just to escape the heat. My annual trip to the mountains is like a test, a bit of training. I live in an old house on the edge of Tokyo. I don’t know if I’ll be able to live there forever. I made a video about this, so please check it out if you’re interested. I’ll put a link in the description. When the time comes to move out of my current home, I don’t know where I’ll move. Considering rent, I’ll have to consider leaving Tokyo and moving to the countryside. That’s why I want to get used to country life. That’s one of the reasons I came here. I grew up in Tokyo, so could I really live in the countryside? It’s exciting, but also a little worrying. If there are still adventures in life waiting for me, I want to be able to enjoy them. When I cook at the mountain home, I don’t have the usual ingredients or tools. I just make food with what I have available. I bought fresh vegetables and fruits locally, and brought some shio-koji-marinated meat from home. You can boil this meat and use it instead of ham or bacon, or just thinly slice it and eat it with salt and pepper. Corn is in season now. A black kite soars majestically through the blue sky. I wonder what it feels like to fly freely? I can’t help but imagine it. No elaborate cooking necessary. Just eat fresh, simple food. That’s the mountain delicacy. For bread, I make focaccia, which only requires one rise. It’s super easy. I had enough time, so I snacked on some edamame beans. Itadakimasu. (”Itadakimasu” is a greeting when eating something. It means “I’m grateful for everything and will eat.”) I always eat wasser when I come here. These peaches have a crunchy texture and are only available here. Yacht races are continuing on the lake. Their matching white sails make me want to see a procession of swans. I played too much, and the tops of my feet got suntaned. It’s more like a burn than a suntan, I guess. I repeat the same thing every year. I’m so relaxed, I’m wearing shorts that I wouldn’t wear in Tokyo. I brought a book with me to read in the mountains. The chair sways gently. The greenery visible through the large glass window. Time to doze off. I had planned to make pancakes for lunch today, but I got some delicious potatoes, so I changed the menu. Potato pancakes, or hash browns, or some other lunch thing I don’t know the name of. I’ll coat the potatoes with salt, pepper, and flour and bake them. Let’s bake some apples, too. Raw apples are delicious, but I also like cooked apples. I think they enhance the sweetness. I put the leftover green onions and myoga ginger in a dressing and added some vegetables. Is this a salad or a mixed dish? This is a nameless lunch. Itadakimasu. The soft, crunchy potatoes are delicious. It’s been four days since I came to the mountains. The daytime is fun. It’s bright and refreshing. It wouldn’t be so bad to bring my work here and live a relaxed life. After a walk in the evening, working up a sweat, I’d jump into the lake, hike a short distance up the mountain path, and head home to a house with a great view. Ah, what a fulfilling life. But, having been born and raised in Tokyo, I’m a little afraid of the countryside. I’m wary of bears, and I look around suspiciously. I know the chances of encountering a bear are far lower than the chances of getting into a traffic accident in Tokyo. I’ve gotten used to small animals and insects, but I hate it when they come into the house. If a big moth were to come in, I might panic. Spending nights alone in the mountains is lonely. A pitch-black forest with no streetlights. I don’t really know what it is I’m scared of, though. Feeling nervous, I greet the night. A starry sky you can’t see in Tokyo. The countryside life I’ve always dreamed of. Could I really do it? My heart races at night, so I go to bed early, and it’s 4:30 in the morning. I wake up as the light grows brighter beyond the mountains. I doze off in bed, waiting for the morning sun to peek over the mountains. The sunrise is beautiful. But more than that, it brings a sense of security. It’s here that I realize the power of the sun. After spending days alone, I’m starting to feel lonely. I had a simple breakfast of oatmeal and hung out the laundry. A friend from Tokyo is coming over today. I went to pick her up at the station. She showed up just when I was starting to feel lonely. I’m truly grateful. We’d promised to make pizza together at the mountain home. We spread a generous amount of homemade pizza sauce, frozen and brought from Tokyo, on top, and topped it with vegetables from the mountain farmer’s market. My friend says it’s her first time making pizza, but she’s amazing. Coffee for two. Just that warmed my heart. Being alone is relaxing, but eating a meal with someone is so much more fun. It’s delicious.

簡単なフォカッチャのレシピ
○材料
フランスパン用準強力粉 200g
(または、強力粉 120g・薄力粉 80g)
砂糖 6g(小さじ2)
インスタントドライイースト 3g
塩 3g
水(冬はぬるま湯) 120g
オリーブオイル 8g
オリーブオイル、ハーブ、塩 適量
○作り方
1.ボウルに小麦粉からオリーブオイルまでを入れ、混ぜ、捏ねる
2.まとまったら、台に出して、なめらかになるまでしっかり捏ねる
3.丸めてボウルに入れ、2倍になるまで発酵する(35℃で約1時間)
4.ベーキングシートの上で、平たく伸ばし、指で穴をあける
6.ハーブ、塩、オリーブオイルをかける
8.180℃に予熱したオーブンで25分焼く

自然豊かなところでゆったりと生活できるていいですね。理想ですが、歳をとると不自由が多くなりますね。そこは車がなくても生活できそうですか?
