I’m simply calling this my “awesome autumn salad”- because that’s exactly what it is! For me, it has lovely flavours of the season- at least here where I live in the South of Italy. Bitter radicchio, sweet beetroot and apple, savoury celery, tangy blue cheese, refreshing pomegranate and toasted almonds. With a simple honey and mustard dressing, enhanced with a hint of thyme, this makes a great alternative to your regular green salad. Enjoy the video and give it a try!
