【夏の風物詩】きゅうりの一本漬けと焼き茄子 | How to cook Pickled Cucumber & Grilled Eggplant

Hello,
my name is Charabuki. I wanted to have a meal
by the irori hearth. So I built a small irori Gazebo. It’s the peak of summer. Today, I’ll make cucumber pickles and a whole roasted eggplant. The bamboo I’m cutting now will be used for
the cucumber pickles. The scent of bamboo is very calming. Bamboo has long been used for food, building materials, tools, and instruments. It has been used
in many different ways. Bamboo shoots
harvested in spring have been eaten
since the Edo period. I wash the cut bamboo
with water. First, I skewer the cucumber
onto a bamboo stick. I peel the skin
so the flavor seeps in. It looks like this now. I put ice into the bamboo tube. Next, I add
the pickling mix. I stir until
the ice starts to melt. Then I put in the
skewered cucumber. It looks great. Now, let’s prepare the fire. The firewood I’m using is cedar. I use dry bamboo
as kindling. Watching the fire somehow soothes the heart. Hearths and campfires
feel nostalgic because our ancestors
also gathered around fire. Next, I’ll make
the whole roasted eggplant. First, I skewer the eggplant
with bamboo sticks. Once the irori fire
settles down, I move the embers
to spread the heat evenly. I’ll use fresh ginger
as a garnish. Fresh ginger contains
a lot of moisture and is softer and sweeter
than regular ginger. I grate it
using a grater. The eggplant is
ready to go. I peel off a bit
of the eggplant skin. It’s perfectly grilled. I place the grated ginger on top. I pour the ginger juice over it too. Finally, I add a little soy sauce,
and it’s ready to serve. Let’s dig in. I’ll start with
the whole cucumber pickles. The crisp sound of the cucumber is a soothing seasonal treat
for the mind and body. The taste of the seasons
is incredibly delicious. Next, I’ll try
the whole roasted eggplant. It melts in your mouth
the moment you bite it. It pairs perfectly
with ginger soy sauce. Today, I cooked
by the irori hearth again. Enjoying seasonal vegetables
with the cicadas singing is special. Thank you for watching today.
