【1週間の献立】せいろ蒸しで素材の旨味を引き出す。シンプル調理だけど見栄えも華やか蒸籠料理
I received a lot of delicious-looking sweet corn in late August 🌽. I’m going to enjoy it right away :-)♪. “Steamed sweet corn, steamed eggplant sandwich, salad, grilled rice balls with pickled plums, and miso soup with mushrooms and fried tofu.” Today, I’m making “eggplant dogs” 🌭, a variation of “steamed eggplant sandwich.” I saw a microwave recipe and wanted to make it. This time, I’ll be steaming it in a bamboo steamer. I’ll coat the minced pork in salted rice malt, sake, and potato starch. And then, this sweet corn. I always want to start with something simple♪. I’ll steam it in a bamboo steamer as is :-). I’ll sandwich the pork between the eggplant like a hot dog. While grilling (steaming) is often done with ground meat, using minced meat makes it so much easier. I’ll pour a refreshing sauce with ginger over the eggplant. I’ll mix grated ginger with ponzu sauce and sesame oil in a ratio of about 2:1. Next, we prepared grilled umeboshi rice balls. All that’s left to do is steam them. Next, we grilled the grilled rice balls. We grilled them in a frying pan with sesame oil until the outside was crispy. We steamed the sweet corn for about 10 minutes, and then sprinkled a little salt on them. The grilled rice balls were ready. The key was to steam the eggplant until it was soft and tender. (We steamed it a little longer. 🍆) We poured it over with shiso leaf , ginger, and ponzu sauce. Sweet and delicious sweet corn. ♡ It’s so delicious you’ll want to munch on it whenever you’re feeling a bit hungry. 🤤 “Tandoori-style swordfish, shredded carrots, marinated purple cabbage, and miso soup with fried tofu, mushrooms, and pumpkin.” First, we made the tandoori-style marinade. We mixed 50g of yogurt with about 1 teaspoon each of cumin, coriander, paprika, chili pepper, turmeric, and salt. Spread the mixture evenly over the swordfish. Use plastic wrap to ensure the mixture is evenly coated, and leave to marinate in the refrigerator. Another dish: 1 egg, 1/2 tablespoon each of mirin and dashi soy sauce, and pepper. Mix together carrots, thinly sliced using a slicer. Arrange the swordfish that have been marinated for about 30 minutes, then add the carrots and steam. After about 10 minutes, stir everything together and season with salt. Steamed carrot stir-fry (is that even a term?) is complete. Finish with black pepper. Arrange the swordfish on a plate. “Chicken and paprika steamed in white wine, purple cabbage and corn coleslaw salad, onion and enoki mushroom soup, toast.” Today, I used two colors of paprika to add a colorful touch. Cut the chicken into slightly larger bite-sized pieces. Rub the chicken with grated garlic, rosemary, salt, and pepper. I didn’t have any fresh rosemary today, so I used dried. Slice the kernels off the corn. Place the corn on one side. Arrange the chicken and peppers on top. Pour white wine and olive oil over the corn and steam. For the coleslaw, shred the purple cabbage. Add 1 tablespoon mayonnaise, 1/2 tablespoon vinegar, 1 teaspoon brown sugar, salt, and black pepper. After about 10 minutes, remove the corn and toss with the purple cabbage. Stir halfway through so the peppers are submerged in the soup. It’s ready when the meat is cooked through and the peppers are slightly softened. (I steamed it for about 20 minutes.) This soup is delicious, with its rich flavor. I also served it with toast :-). Simple and delicious, I love this kind of seasoning♪. “Cold Lemon Pasta with Corn and Bitter Melon.” (When it comes to raw corn, I always have trouble deciding whether to shred it with a knife or break it by hand (lol).) It was hot today, so I made a cold pasta using what I had in the fridge. I chose sweet corn and bitter melon. I steamed the corn first, which takes longer, and added the bitter melon halfway through. I used lemon to give it a refreshing flavor. 1-2 tablespoons of lemon juice, 1 tablespoon of olive oil, a little over 1 teaspoon of shio-koji, and black pepper. I wanted to add some grated garlic, but I didn’t have any, so I gave up today. Let the steamed corn and bitter melon cool. Once they’re cool, mix them together with the lemon sauce. Once the pasta is cooked, rinse with water and drain thoroughly. Mix with the sauce, adjust the seasoning, and it’s done :-). Come to think of it, it’s a collaboration of ingredients from Hokkaido and Okinawa. (By the way, I’m half Hokkaido and half Okinawa, so I was kind of happy about that (lol).) The sweet corn and bitter bitter melon are a surprisingly good match. ♪ “Steamed Potato Pizza with Tomato, Corn, and Whitebait.” Today, I’m using vegetables from my fridge again. Mix corn, tomatoes, garlic salt, oregano, and olive oil. Thinly slice the potatoes. Spread them on the bottom. Layer and steam. After steaming for about 10 minutes, crumble the tomatoes and mix them together, then spread them on top of the potatoes. I arranged it like a pizza:-). Top with bell peppers, whitebait, and cheese. Steam for another 5 minutes. I thought the potato starch would help it stick together like it would when baked, but it released moisture, so it didn’t work out that way… (laughs). Of course, it tasted delicious! ♪ Thank you for watching until the end today:-).
