🧡CREAMY SQUASH PASTA!🧡
Ingredients
• 1 butternut squash or any squash you like
• 1 block of cream cheese or feta cheese
• Extra virgin olive oil
• Salt & pepper, optional
• 150g (1 1/2 cups) uncooked pasta
For young babies, you can use mascarpone instead of cream cheese as it’s naturally lower in sodium.
Method
1. Preheat the oven to 200°C (400°F). Cut the butternut squash into cubes and spread them on a baking sheet.
2. Place the cream cheese/feta in the middle of the pan and drizzle with olive oil.
3. Season with salt & pepper if desired.
4. Bake for 35-40 minutes or until the butternut squash is soft.
5. Meanwhile, cook the pasta according to the instructions on the package. Reserve about 1 cup of the starchy pasta water, then drain the pasta in a colander.
6. Remove the baking dish from the oven.
7. Add the cooked pasta to the pan and stir. Add some of the pasta water until you reach your desired creaminess.
8. Serve and buon appetito! 😋
👶🏻 Suitable for 6+ months. Avoid salt for babies under 1 year old.
❄️ To store creamy squash pasta, cool it down, transfer to an airtight container, and refrigerate for up to 2 days. To reheat, warm gently on the stove, adding a splash of water to prevent drying out.
