冷やし豆乳坦々そうめん【夏の定番メニュー】暑い夏に食べたくなる!濃厚クリーミー素麺 [Japanese Usual Dish] Dan Dan noodles / Somen noodles

Hi, this is oideyo kitchen. Today’s menu is the summer staple, “Chilled Soy Milk Dan Dan Somen Noodles”. I always want to eat cold Dantan noodles in the hot summer! This time with soy milk and somen noodles to make it a little healthier. Finely chop the ginger and garlic. Cut the potherb mustard into pieces. Gently fry the ginger and garlic in sesame oil. Once it’s out of the pan, take it out of the pan. Fry the ground beef. If you don’t move the meat as much as possible and let it cook and harden before you break it up, you’ll get a savory, rich flavored meat miso. Wipe off any excess oil. 1 Tbsp of sugar. 2 Tbsp of miso. 1 Tbsp of chicken stock. Mix in 1 tsp of sesame paste Add back the ginger and garlic and fry well. Add 3 Tbsp of Mentsuyu. Boil the somen noodles. Let it cool under running water. Mix the meat miso with ice and soy milk. Let’s have a taste. Serve in a bowl. I forgot to put the sesame seeds in… Serve with potherb mustard and string peppers. Turn in some chili oil and voila!

■材料(2〜3人分)
そうめん:3束
合い挽き肉:120g
にんにく:1片
生姜:1片
水菜:適量
豆乳:400cc
麺つゆ:大さじ3
砂糖(花見糖):大さじ1
味噌:大さじ2
ガラスープ:大さじ1
ねりごま:小さじ1

※分量はとっても大まかなので、お好みで調整してみてください。
