Daigaku Imo (Candied Sweet Potatoes) (大学芋)
Daigaku Imo are sweet potatoes that are deep fried and marinated in a Japanese-style caramel sauce which creates a crunchy sweet outer coating, and a soft and creamy texture inside. My grandmother would make this dish as an afternoon snack for my sisters and I when we were growing up.They’re so delicious that you won’t be able to stop eating them!
