Ingredients required to make Prawns Bibimbap:

FOR THE BIBIMBAP SAUCE

1 tbsp chilli paste

1/2 tbsp rice vinegar

1/2 tsp soy sauce

1 tsp sugar

2 garlic cloves, minced

1 tsp toasted sesame oil

FOR THE VEGETABLES

1/2 carrot, cut into matchsticks

1/2 zucchini, cut into matchsticks

1/4 bunch spinach

3-4 mushrooms, quartered

4 garlic cloves, minced

2 tbsp vegetable oil, divided

1/2 tsp salt, to taste

FOR THE PRAWNS

4 prawns, cleaned and deveined

1 tbsp sriracha sauce

2 garlic cloves, minced

1 tsp sugar

1/2 tsp soy sauce

1 tsp lemon juice

FOR THE BIBIMBAP

1 cup white rice, cooked

1 egg

1/2 tsp toasted sesame seeds

1 tsp toasted sesame oil, to drizzle over the top

How to make Prawns Bibimbap:

1) Mix the sriracha sauce, garlic, sugar, soy sauce, and lemon juice in a bowl. Add the prawns and mix well to coat. Set aside for at least half an hour.

2) Mix all the ingredients for the bibimbap sauce. Set it aside.

3) Heat up 1 tsp of oil in a pan and saute the carrots for 5-6 minutes until tender. Season with salt. Remove from heat and set aside.

4) Heat up 1 tsp of oil in the same pan and saute the zucchini for 3-4 minutes until tender. Season with salt. Remove from heat and set aside.

5) Heat up 1 tbsp of oil in the same pan and add the spinach. Saute until wilted and then season with salt. Add half the garlic and saute for 30 more seconds. Remove from heat and set aside.

6) In the same pan, heat up 2 tsp of oil and saute the mushrooms. Add salt and cook until the liquid has evaporated. Add garlic and cook for an additional 30 seconds. Remove from heat and set aside.

7) Again, using the same pan, heat up a bit of oil and add the marinated prawns. Place them in a single layer on the pan and do not move them around too much. Let them cook for 90 seconds and then flip them over. Cook for another 90 seconds. Prawns should be opaque and curled up like a C.

8) Before cooking the eggs, we will assemble the bibimbap bowl. Put 2 tbsp of the bibimbap sauce at the bottom of a bowl. Top with cooked rice. Place a heap of each vegetable around the rice in piles. Place the prawns on the rice as well.

9) Heat up a tiny bit of oil and crack an egg into a pan. Cook it until the whites have just set but the yolk is nice and runny. Carefully place it over the rice and garnish with toasted sesame seeds and a drizzle of sesame oil.
