ご飯のお供に『新生姜の佃煮』

※くせになる味です。

『新生姜の佃煮』の作り方

《材料》
⚫︎新生姜(150g)
《調味料》
⚫︎醤油(大さじ1と半杯)
⚫︎酒(大さじ1と半杯)
⚫︎みりん(大さじ1と半杯)
⚫︎砂糖(大さじ1と半杯)
⚫︎けずり粉(小さじ1杯)
⚫︎いりごま(大さじ1杯)
⚫︎塩(ふたつまみ)

《作り方》
1.生姜の皮をスプーンで剥いて、薄切りする。2.ボウルに生姜を入れ、塩(ふたつまみ)を入れ、よく揉み込み7分間おく。3.鍋に水を入れ沸騰させ、生姜を入れ7分間茹でる。(×2)。4.鍋に生姜を入れ、砂糖(大さじ1と半)、酒(大さじ1と半)、みりん(大さじ1と半)を入れ火をつける(中火)。5.沸騰したら醤油(大さじ1と半)、さらに沸騰したらけずり粉(小さじ1)を入れ、汁気が無くなるまで煮詰める。6.いりごま(大さじ1)を入れ、混ぜたら完成。

How to make “Fresh ginger tsukudani”

Ingredients
⚫︎ Fresh ginger (150g)
Seasonings
⚫︎ Soy sauce (1 and a half tablespoons)
⚫︎ Sake (1 and a half tablespoons)
⚫︎ Mirin (1 and a half tablespoons)
⚫︎ Sugar (1 and a half tablespoons)
⚫︎ Shavings (1 teaspoon)
⚫︎ Roasted sesame seeds (1 tablespoon)
⚫︎ Salt (2 pinches)

How to make
1. Peel the ginger with a spoon and slice thinly. 2. Put the ginger in a bowl, add salt (2 pinches), rub well and leave for 7 minutes. 3. Put water in a pot and bring it to a boil, add the ginger and boil for 7 minutes. (×2). 4. Put ginger in a pot, add sugar (1 1/2 tablespoons), sake (1 1/2 tablespoons), mirin (1 1/2 tablespoons), and turn on the heat (medium heat). 5. When it boils, add soy sauce (1 1/2 tablespoons), and when it boils again, add dried shavings (1 teaspoon), and simmer until the liquid is gone. 6. Add roasted sesame seeds (1 tablespoon), mix, and it’s done.
