Vietnamese fried spring rolls are definitely one of my favorite type of egg rolls because of the flavorful filling and the extra crunchy and slightly chewy wrapping when paired with sweet fish sauce it has to be a perfect combo start by making the sauce by dissolving sugar with hot water and adding Thai chilies minced garlic lime juice and fish sauce set that aside to cool down while you rehydrate wood your mushrooms and mung bean noodles once rehydrated chop them into smaller pieces and combine it with ground pork shredded carrots mint onion and garlic an egg salt sugar chicken buan black pepper and fish sauce mix thoroughly and make your Spring Rolls by dipping rice paper into warm water place a few tablespoons of filling in the center and tightly roll it like a burrito deep fry at 350° F until golden brown and crispy serve with lettuce herbs and the fish sauce you made earlier and enjoy

Vietnamese Fried Spring Rolls
Ingredients
Sauce
* 1/2 cup sugar
* 1/2 cup warm water
* 5 Thai chillies(minced)
* 4 cloves garlic(minced)
* 5 tbsp lime juice
* 6 tbsp Chinsu fish sauce(link: https://www.amazon.com/stores/page/137E6B02-AFA9-4642-822D-FCFCBD5656D9?channel=Derek1 )
Fried Spring Rolls
* 1 lbs ground pork
* 3/4 cup woodear mushrooms(soaked and chopped)
* 3/4 cup mung bean noodles(soaked and chopped)
* 3/4 cup grated carrots
* 1/4 cups onions(minced)
* 3 cloves garlic(minced)
* 1 egg
* 1/2 tsp salt
* 1 tsp sugar
* 1 tsp black pepper
* 1/2 tsp chicken bouillon
* 1 tbsp Chinsu fish sauce
* Spring roll Rice Paper
* Oil for frying
Instructions
Sauce
1. Combine sugar and warm water and mix until sugar is dissolved. Add rest of ingredients and chill in the fridge.
Fried Spring Rolls
1. Soak woodear mushrooms and mung bean noodles in boiling hot water for 30 minutes. Drain and use scissors to cut the mungbean noodles into smaller pieces and thinly slice the woodear mushrooms.
2. Add filling ingredients to a bowl and mix thoroughly.
3. Soak rice paper in hot water and add 3 tbsp of filling in the center of the wrapper.
4. Roll like a burrito making sure to tuck the sides in.
5. Fry at 350 °F for 5 to 6 minutes making sure to pop any bubbles that form.
6. Serve with sauce, lettuce, mint, and cucumber.
