Good evening! It’s Abeshi! Today, I’ll show you some stamina-boosting food that will help you beat the heat! Myoga has an appetite-boosting effect, so if you eat it at the beginning of a meal or in between meals, you can eat a lot of rice even in the heat when your appetite is reduced! When you want to gain power, it’s important to choose the right ingredients, but it’s also important to eat a lot without losing your appetite! The colors are summery♡︎ Did you notice that my recipes use very little “sugar”? I use almost all mirin and honey for sweetness, and try to use natural, healthy, and umami-rich sweeteners♪ I boil the mirin in the microwave before using it. Garlic (2 cloves), miso (2 tablespoons), mirin (1 tablespoon), doubanjiang (1/2 tablespoon), sweet bean paste (1/2 tablespoon) A classic stamina ingredient Garlic is a rich source of sweet bean paste, and if you add sweet bean paste, it will have a deeper flavor and a nostalgic taste reminiscent of spicy miso from the countryside…! It smells nostalgic… Cook the vegetables for about a minute. This is to bring out the umami of the oil and to soften the spiciness of the ingredients! In particular, the bright color of the myoga is easily lost, so be careful not to heat the sides! Since it is cooked quickly, you can feel the freshness of the vegetables and the aroma of the myoga spreads throughout your mouth ♡︎ This country-style spicy miso also whets your appetite… A side dish that is unique to summer, with a good aroma, good texture, and good color. “Spicy Miso Pickled Myoga and Shishito Peppers” Finely dice each vegetable. You can use any vegetables, but the key to making it delicious is to add various vegetables to create different textures! It’s easy to balance the nutrition of summer vegetables! Vegetables of the same color often have the same nutrition. So if you prepare vegetables so that the colors don’t overlap, you will naturally balance the nutrition. It’s simple and easy, isn’t it? After that, the vegetables with high water content will increase, so if you rub salt in them to remove excess water, the nutrients will be condensed and you can eat a lot of vegetables! Rub salt (1/2 teaspoon) into the eggplant and leave for 10 minutes. Soak the wakame (5g) in water as well! Seaweed dishes are something we tend to forget about if we don’t make a conscious effort to eat them at our table… so if you make it as a side dish like this, you won’t forget to serve it and it’s easy to balance your daily menu! Plenty of fresh mozuku (100g), black vinegar (3 tablespoons), wasabi (1 tablespoon), soy sauce (2 tablespoons), boiled mirin (2 tablespoons) Mozuku and mekabu are great to slurp on in a pack, but if you add plenty of vegetables like this, you can get plenty of vitamins and it’s a beauty side dish that’s great for your skin♡︎Wasabi is added as a secret ingredient, so it has a refreshing aroma and an addictive taste that you can’t stop slurping on. The power of black vinegar can also help you recover from fatigue! “Summer vegetable slurping mozuku” Cut chives (1 bunch) into 1cm widths. The aroma of this chive is the secret to its deliciousness…♡︎A whole head of lettuce is used! The key is to tear it into large pieces with your hands! Even with this amount, the finished product is much smaller and it’s so delicious that it disappears in an instant, so I recommend making a lot… Sesame oil (3 tablespoons) and minced garlic (1 clove) Heat over low to medium heat until it smells good. Chives smell best when they turn a vibrant color. Stir-fry the oil quickly, then add soy sauce (1 tablespoon), mirin (1 tablespoon), and chicken stock (1 tablespoon) . Be careful not to overcook so that the chive’s aroma doesn’t disappear! Fry until it’s very hot so that the vibrant color doesn’t fade. Lettuce can discolor and become bitter if it is cooked. So mix it with the sauce while it’s still hot in the bowl and let the lettuce soften in the preheating, and you won’t have to worry about discoloration! It’s so addictive that it disappears in an instant… The chives also have a nice color that doesn’t fade, right? ♡︎ “Lettuce and Garlic Pickles” These green and plump peppers are just right for eating. Summer peppers that have been exposed to plenty of sunshine are even more delicious, aren’t they?♡︎ The peppers (3) are large, so I cut them into 6 equal parts. There was a crunchy sound when I was cutting them… I cut one onion into 1cm widths to keep the crunchy texture of the peppers . In a frying pan, I fried thinly sliced pork belly (300g) with a little salt over low to medium heat until the color changed to some extent. To remove the meaty smell, I added two minced garlic cloves and a pinch of sake. I’ve recently become more sensitive to the smell of meat , so I’ve been trying out various ways to remove the smell, but this is the easiest and most reliable way! Soy sauce (2 tablespoons), mirin (2 tablespoons), oyster sauce (1 tablespoon), water (100 ml) Make yakiniku sauce in a frying pan and simmer for 5 minutes. Of course, you can use commercially available sauce instead! It ‘s a gentle seasoning with plenty of vegetables, but it’s based on yakiniku sauce, so it goes really well with rice ♡︎ “Yakiniku Umani” I tried the “Nasu Dog” that is a hot topic on the streets and it was so delicious that I’m going to deliver a recipe that I arranged in Abeshi’s style to make it easier to eat and more summery. Make a cut in the eggplant vertically to a depth of 2/3 and then cut it into 4 equal parts horizontally. Since it’s cooked in the microwave, the meat tends to get hard if left as is… so I’ll rub in some shio koji to soften it and add seasoning! The sauce is a refreshing summery plum sauce! Umeboshi (2 pieces), soy sauce (1 tablespoon), boiled mirin (2 tablespoons) and add the broth later to thin it out. Plums can also help increase your appetite and relieve fatigue! Thanks to the salt koji, the pork, which has become soft, is stuffed between the eggplants. By heating the meat after sandwiching it, the flavor of the meat will gradually soak into the eggplant… Heat in a microwave at 600W for 10 minutes. The heating time is long, so you can chop up some green onions in the meantime. It’s cooked thoroughly inside! Add the broth (2 tablespoons) to the sauce and stretch it. It’s a little big for one bite (?), but I cut it before making it so it’s easy to eat♡︎But I want to make an impact, so when I serve it on the table, I put the whole eggplant horizontally for a big impact! Please try this whole eggplant dog, which allows you to feel the juiciness of the eggplant to the fullest ! “Eggplant dog with minced pork marinated in koji” A favorite tomato dish with myoga as the key♡︎ Thinly slice myoga (2 stalks). I feel like there’s one tomato dish in each video recently. lol Even though they are the same tomato dishes, they all give a different impression, so this year I think I’ll be able to get the nutrients of tomatoes in a delicious way without getting bored. Divide the chicken breast (1 piece) into 3 blocks and slice thinly. By dividing it into blocks like this, you can cut the fibers and shorten the fibers , which makes it less dry to feel like chicken breast ! Add a little salt, a little sake, and steam for 6 minutes over low to medium heat with a lid. It ‘s cooked thoroughly! Soy sauce (2 tablespoons), mirin (2 tablespoons) . I haven’t been able to do it for a while, but… I’ll introduce you to some meat dishes that are great for camping and BBQ! Marinate chicken thighs (500g) in seasonings. Fish sauce (1 tbsp), oyster sauce (2 tbsp), cumin seeds (1 tsp), sake (2 tbsp). Cumin seeds add a nice spicy accent! Use half the lime juice! It instantly gives off an exotic and refreshing vibe♡︎ Rub it in thoroughly and let it soak for 15 minutes. Put a lot of oil in a frying pan, add cumin seeds (1 tsp), minced garlic (2 cloves), and heat over low heat until it gives off a nice aroma. Add the marinated chicken thighs and cook for 3 minutes over low to medium heat with the lid on. Open the lid, stir the whole thing and cook for 1 minute to remove the moisture, and it’s perfect! Squeeze half a lime to finish. Since it’s a BBQ stove, when grilling, cook it slowly, not in the center but a little away from the fire. Grill it quickly in the center at the end and squeeze the lime! Beer is a sure thing. It contains lime, so it goes well with mojitos! “Tropical Spicy Chicken” Let’s make a chilled soup to cool down and get through the hot summer! It is very good for the body to get plenty of nutrition from vegetables to get through the hot summer, but it is also necessary to physically cool down the body! Slice the yellow pepper (1 pc) and cucumber (2 pcs) thinly and finely so that they are well mixed with the soup. Cut the onion (1 pc) into 1 cm widths as it will be cooked.
