Radicchio Salad with Roasted Butternut & Blue Cheese #recipe
If you think winter salads are boring, this one will change your mind. I start with radishio cuz I just love that bright pink color and it is a little bit bitter, so I added so many things to disguise this. I couldn’t decide whether to add apple or pear, so I added both and I did not regret it. I made a blood orange vinegaret spiked with djon and maple syrup and this is just so good. Toasted walnuts and pumpkin seeds add extra crunch. Toss everything in a bowl with some extra sliced crunchita or romaine to add balance. Fennel goes into the mix as well along with roasted butternut crumble over a blue cheese or you could use goat cheese if that’s more of your vibe. Couldn’t resist adding my favorite pickle sultanas which add a tiny pop of sweetness. This is what winter salad should be all about. Big and satisfying.
