秋に仕込む栗の渋皮煮 | 少し肌寒い日のポトフ| 和を楽しむ
Good morning. It is getting a little chilly in the morning and evening. Today, I get up a little early and prepare a warm pot-au-feu. First, the seasonal vegetables are carefully washed. I like to put turnips in the pot-au-feu I make in the winter. The sound of cutting vegetables echoes through the quiet kitchen in the early morning. On holiday mornings, I often get up at the same time or earlier than on weekdays. I always wake up early because I look forward to breakfast on my days off. I feel like an elementary school student who wakes up early on the day of a field trip. Speaking of which, I’ve been updating Instagram frequently lately. I am not good at peeling potatoes with a peeler and always end up using a knife. Carefully laying out the vegetables one by one in the pot. A little more luxurious than usual with sausage and bacon. Pouring water slowly. Use a little less water and compensate with the water from the vegetables. Cover and simmer slowly over low heat. Bring to a boil and add consommé. Tear the bay leaves a little and add them. Finally, add the celery leaves. We always buy his favorite, the Shine Muscat, when it’s on sale at the supermarket. If left alone, he will eat a whole bunch by himself without a care in the world. You can see the vegetables soften and the delicious broth soak into the soup. Potatoes look delicious. Turnips are also tender. This ladle I recently came across is so excellent that I would highly recommend it to anyone who is a ladle refugee. Not only is it easy to pour with the spout on both sides, but it also scoops up the excess soup and sauce at the bottom of the pot nicely. I keep the seasoning light, so the saltiness of the mustard is just right. Bread on a Ballarini serving pan. Finally, prepare the coffee. The sound of happiness. With the sound of coffee falling, today’s breakfast seems to be complete. The kiwi is ripe and very sweet, and the fresh texture of the Shine Muscat bursts in my mouth. First sip of the pot-au-feu soup. I love to eat bread with butter, and I also love to dip it in the soup and chew the soggy bits all at once. The broth soaks into the tender vegetables and enhances the sweetness of the original vegetables. We are heading to the café. We come to Yohak, which has been on my mind for a while. The interior of the restaurant had a very soft atmosphere and was frequented by many locals. Cute pendant lamps of various kinds hanging. The weather outside is somewhat unsettled, raining on and off. I choose an afternoon tea set. The cream cheese and honey whole grain sandwich was rustic and delicious. I even had a dessert tart. Strangely enough, when the weather gets cold, days when I want to stew at night come regularly. I recently saw a movie called “Little forest” in which they were making “Shibukawani” chestnuts, so I’m going to try to copy that scene. This is the second time I’ve seen Little Forest, which is my favorite movie. I have a feeling of longing for the main character who lives honestly and without any distraction from nature and the seasons. Speaking of “Shibukawani”, I remember the delicious Shibukawani that my sister made and shared with me last year. I’ll try my best to get close to that taste! Once boiling, dump out the water and peel off the softened skin. It is surprisingly difficult to peel the thin skin without damaging it. The peeled chestnuts are put back into the pot. Add baking soda to remove lye and let simmer. Scoop out the lye that comes out frequently. The color of the water has changed a lot. Carefully cleaning the remaining black streaks. Repeat the process again with baking soda. I think I’ll make some tea and read a book while I wait. Earl Grey scones that I made with my sister to go with it. I like to spend my evenings like this during the cold season, enjoying the evening. I remember standing in the kitchen with my mother in the old days making apple jam. Rustic tasting apple jam. I’ll make it again when I can get some red apples ”Kogyoku”. Seasoned with gently and rustically sweet millet sugar. Let sit overnight in the refrigerator to soak up the flavor. Make tea with the finished Shibukawani. The result is a dark and delicious color. Making matcha after a long time. When I drink matcha, my back naturally straightens. The sticky sweetness is simple and delicious. It takes a lot of time and effort, but it is still delicious and makes me want to make it again.
