Radicchio, Blue Cheese and Pine Nut Salad
for a simple starter salad or an easy lunch you can’t go past this wonderful combination of redico blue cheese and pine nuts to assemble my salad I place four to five torn redico leaves and four handful of washed rocket or water crisp leaves in a salad bowl I very finely sliced half a fennel bulb using a mandalin or a vegetable peeler next I very finely sliced two unpeeled apples I put them in the bowl and toss through 2 tblsp of lemon juice this is going to stop them from browning now put this to one side while you make the dressing now for my honey mustard dressing in a small jar Shake together 1/4 of a cup of neutral oil 2 tbspoon of white wine vinegar the juice of half a lemon a teaspoon of light honey a teaspoon of dejon mustard half a clove of crushed garlic and some salt and ground black pepper this is a fantastic fantastic dressing I often like to make it in bulk and just have it in the fridge I sprinkle over 150 g of crumbled creamy blue cheese and4 of a cup of toasted pine nuts I toss through my honey mustard dressing divide it between six plates and it’s ready to serve this is such a great combination of flavors Tangy greens crispy apples and Fel and that delicious mustardy honey dressing finished with some creamy blue cheese and the bite of toasted pine nuts it’s just such a terrific starter and a lovely light [Music] lunch
A simple starter or an easy lunch doesn’t get much better than this wonderful combination of radicchio, blue cheese and pine nuts with honey mustard dressing.
