【子供5人が大興奮!】夕方18時からの簡単!夏ご飯レシピ4品|とうもろこしご飯|Corn rice – summer menu

Usually, I was very busy in the evenings, picking up my children from kindergarten and after-school care, then going shopping. Recently, in preparation for after-birth, a family supporter has been coming to pick up my children several times a week, so I went shopping alone at a nearby supermarket. That’s right, May and June are the season for plums. I made crunchy plums that my children love. They’re pickled in sweet vinegar, which is easy for children to eat. If I let them sit for another two weeks, they should be even more delicious. I’m looking forward to eating them. Now that the family supporter has come to pick them up, I feel a little more relaxed in the evenings . I want to get as much housework done as possible before the children come home. I bring in the sheets of the futon that I hung out to dry. Let’s have the children put their sheets on themselves. When I have some free time, I end up running around a lot. This was the first time I asked the family supporter to pick up my children. My youngest child is shy, so I’m a little worried. It’s the season when summer vegetables are delicious. Today, we will make four dishes that you want to eat in the summer, such as corn rice and chicken meatballs with plums. First, we will prepare the corn rice. All the children love corn. We will make corn rice packed with the deliciousness of corn. First, we will cut the corn. The corn cob also gives off a lot of delicious soup stock, so the key is to cook it together. Here, kelp. Then add the amount of water. When the older children come home, I will add the seasonings and start cooking. A refreshing side dish that is perfect for the upcoming humid hot season. I’m going to make plum chicken meatballs using plums and shiso. First, finely chop one stalk of green onion. You can also use onions instead of green onions, as they will add sweetness and be delicious. After finely chopping this many green onions, your eyes will start to water. Next is pickled plums. This year, I’m using fully ripe plums, so I’m pickling them. The amount of pickled plums you use varies depending on the plum, so adjust it accordingly. Next is shiso leaves. The faint aroma of shiso leaves is irresistibly refreshing. When I go to the supermarket, I always end up putting a large pack of chicken breast in my basket. It’s cheaper than pre-minced chicken, so I use a food processor to make my own minced meat. After removing the skin and wiping off the moisture, I put it in the food processor. In no time, I have a lot of minced chicken. [Plum meatballs] (Ingredients) Chicken breast, pickled plum, green onion, shiso leaf, egg (Condiments) Soy sauce, mirin, potato starch. After adding the seasonings, knead thoroughly. Kneading this amount of meatballs is hard work after all. Ah, I’m tired. This is tiring. For delicious meatballs, I’ll put in one more effort. Add chopped green onion, pickled plum, and shiso leaf. Mix well and the refreshing plum meatball dough is complete. While reading Hijiki and bacon stir-fried with garlic is also a standard side dish in my house. Let’s soak the hijiki first. In the summer, I always make grilled eggplant. One of my favorite dishes. Add a little more oil and grill the eggplant. Add myoga to the grilled eggplant. The refreshing aroma brings out the flavor of the eggplant. The eggplant has been grilled to a nice color. At times like these, it’s great to have foods that are high in potassium. Hijiki and mushrooms are high in potassium and are said to be good for preventing swelling. Season with salt and pepper. Hijiki is also rich in iron, calcium, and dietary fiber, It’s a perfect ingredient for pregnant women and growing children. It can be used in both Japanese and Western cuisine, and is actually very versatile. This hijiki and bacon stir-fried with garlic would also be good to put in a lunch box.
