Today I’m making a quick dinner using what I have in the fridge. Three dishes made with common summer vegetables: Tomatoes, eggplant, zucchini, paprika, onions. I had some chicken tenderloins stored in the freezer so I used them. If you prepare it and freeze it, it comes in handy for occasions like this. The first dish is chilled tomatoes and onions with lemon marinade. It’s a simple side dish that just requires cutting and tossing.I’ve made chilled tomatoes and onions with a lemon marinade. The tomatoes were a little big so I cut them in half again. I’ve introduced this before, but this lemon squeezer is a Pigeon cooker for baby food. It’s over 30 years old, but I’m still using it. 1 tbsp lemon juice, 2 tsp olive oil, a pinch of sugar, and a little salt and pepper. Drain the onions that have been soaking in water. Did I squeeze too much? (hahaha) Once mixed, chill in the fridge. The second dish is also a no-cook dish [Steamed eggplant and paprika in the microwave with grated daikon radish and ponzu sauce]. Cut the eggplant and paprika into chunks, heat them in the microwave, and top them off with grated daikon radish and ponzu sauce. It’s a refreshing side dish perfect for hot days. Place them in a heat-resistant container, wrap loosely with plastic wrap, and heat in the microwave at 600W for about 5 minutes. While the eggplant and paprika are cooling, prepare the third dish. make the third dish [Grilled chicken tenders and zucchini with aromatic sauce]. Grill the zucchini in sesame oil and remove it from the heat. Cut the chicken tenders into thin slices, sprinkle with salt and pepper, and coat with potato starch. 1/2 tsp sugar, 1 tbsp mirin, 1 tbsp soy sauce, 1 tsp sesame oil, a moderate amount of grated garlic, and a little pepper. Before grilling the chicken tenders, make the aromatic sauce. Arrange the chicken tenders and brown both sides. Add the aromatic sauce, cover and steam for about 3 minutes on low heat. Add the zucchini back in and mix lightly to finish. Once cooled, drain the eggplant and paprika and place in a serving dish. Grated daikon radish ponzu sauce A little sesame oil spring onion to finish. Garnish with Italian parsley for a colorful look.
