The classic German recipe, Hollandese sauce vs. Japanese-style grilled asparagus. I would like to share the tastes of both Germany and Japan. Both are very delicious, so please watch until the end. I immediately went to buy asparagus at a stall that appears in my neighborhood only during the summer. The vegetables and fruits sold here are sold in three different locations, so they are quite expensive, but the taste is excellent no matter what you buy. What ? I’m buying strawberries… I was supposed to buy asparagus today… This lady said she came from Romania. Apparently, workers from abroad come to help with the harvest at this time of year. By the way, even when the border was closed due to COVID, these people were the only ones allowed to enter the country as an exception. That’s how important white asparagus is to Germans. Let’s go home and make it right away. Boil the asparagus you bought in a pot of water with salt, lemon juice, and sugar. The lemon juice brightens the whiteness, and the sugar brings out the sweetness of the asparagus. Put the asparagus in a boiling pot and boil for 7 to 8 minutes. If you can easily insert a bamboo skewer into the base, it’s ready. In Germany, they sell packaged instant hollandaise sauce like this, but today I wanted to make it myself. Mix 2 egg yolks with 3 teaspoons of lemon juice. In Germany, they don’t have the habit of eating raw eggs, and hygiene management is not as strict as in Japan. There is always a risk of salmonella, so today I will use fresh organic eggs. Boil water for the bain-marie in a pot next to it. A thermometer is essential. The optimum temperature is 60°-65°, which is the temperature that can sterilize but does not solidify the eggs.When the water temperature reaches 70°-75°, add the egg yolks while boiling them.Check the temperature from time to time… I was too worried about food poisoning, so I made the temperature a little higher.Add 100g of melted butter in two batches.When it becomes smooth, add a little white wine.1 teaspoon.This will improve the aroma.Add pepper here and it’s done.I thought I had failed, but it was pretty good.Today ‘s dinner is a very German-style meal to go with asparagus.Grilled white sausage, sauteed potatoes with rosemary, a salad with basil, and a soup made from the boiled asparagus water.Now , on the second day, I’ll make the same asparagus in a Japanese style.Cut the asparagus to an appropriate length and place it in a silicon steamer and microwave it for 5 minutes.Boiling is delicious, but if you want to lock in the flavor of the asparagus, steaming is also recommended.Make the miso sauce while it’s in the microwave. This is my homemade Nagoya Hatcho miso, given to me by a Japanese friend. It’s aged for 5 years and is very delicious. I love lemon juice, apple cider vinegar soy sauce , and this yuzu pepper I bought in Japan. I also add sesame oil… mix it up and it’s done! Heat oil in a frying pan and arrange the steamed asparagus. The asparagus is cooked, so turn it over occasionally and brown it all over. Once it’s cooked, arrange it on a plate and grill the broccoli that you steamed in advance in the same frying pan . When it’s done, pour the miso sauce over it. Today’s menu is grilled asparagus and broccoli with miso sauce, chicken thighs with salt and lemon flavor, and miso soup .
