Diabetic Recipe – Grilled Chicken Salad with Avocado light lemon dressing by What Shall I Cook
Ingredients:
For the salad:
2 boneless, skinless chicken breasts
Salt, pepper, and a pinch of red pepper flakes
1 tablespoon olive oil
6 cups mixed greens (like romaine, spinach, or arugula)
1 avocado, sliced
½ cucumber, thinly sliced
¼ red onion, thinly sliced
½ cup cherry tomatoes, halved (optional)
For the lemon dressing:
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard (optional)
1 teaspoon honey or maple syrup
Salt and pepper to taste
Instructions:
Season and grill the chicken: Rub chicken with olive oil, salt, pepper, and red pepper flakes. Grill over medium-high heat for 3–4 minutes per side, or until cooked through. Let rest for 10 minutes, then slice.
Make the dressing: Whisk together olive oil, lemon juice, mustard, honey, salt, and pepper until emulsified.
Assemble the salad: In a large bowl, toss greens, cucumber, onion, avocado, and tomatoes with the dressing.
Top with grilled chicken and serve immediately.
