You can use it as a reference if you’d like to make it.First , let’s prepare the sea bream.This time, I bought a fish cut like this.The scales were also removed, but sometimes those scales remain. Be sure to check with a knife like this. Sometimes there are bones left, so if there are any bones left, be sure to remove them by deboning. Then, cut into 2 pieces. Add a pinch of water to the sea bream and let it sit in the refrigerator for about 30 minutes . After 30 minutes, water will come out from the sea bream , so wipe it off with a paper towel. This water is the unique characteristic of fish. This will reduce the odor to some extent , so be sure to remove the water thoroughly.And if there is any water on the river side, wipe it off with a paper like this and use it next time on the grapefruit. This time I’m going to cut the grapefruit into quarters , but I’m going to use about 2 to 3 tablespoons of it.Mash one garlic clove like this with a knife.This garlic will give you the flavor of the sauce. We’ll use it for dipping.Now, let’s start by grilling the sea bream.Pour 2 tablespoons of olive oil into an unheated frying pan and heat over medium heat.Once the frying pan has warmed up, fry the sea bream, side down.When you start grilling, The sea bream will warp back, so you can use chopsticks to prevent it from warping, so you can press it with a spatula to prevent it from warping, but while holding it like this, first grill it to prevent it from warping.Once the sea bream has subsided, there is no need to press it with a spatula. And from the surface of the river, when it’s about 70% cooked, turn it over and quickly add fire to the other side . Cook the noodles first and then turn them over to cook. When the whole surface turns white and becomes fluffy, take it out. The key to making the sun fluffy is the doneness of grilling, but when choosing this sea bream, try as much as possible. I think it would be better if you choose a sea bream that is thicker than this.If you use a small sea bream that is too thin, it will be difficult to get a fluffy finish.After searing the sea bream, the next step is to make the sauce. Discard the oil and wipe it clean with a paper towel. After wiping it clean with a paper towel, add 10g of butter, 1/2 teaspoon of olive bubbler, and crushed garlic and heat over low heat. When the garlic comes out, take it out before it burns. Then turn off the heat. Now add a tablespoon of fresh cream and the grapefruit that will be the base of the sauce. I added about 2 tablespoons of the grapefruit fruit that I added this time. Just this grapefruit. The amount depends on your preference , so I think you can make it delicious even if you add about 3 or 4 tablespoons, so start with about 2 tablespoons and see how it goes and adjust accordingly.Add about a grain of mustard and heat over low heat. While stirring , use a spatula to mix thoroughly. Once the mixture is well mixed, add 1 pinch of salt and a pinch of pepper to adjust the taste. Place over low heat until the mixture has thickened, then finish with another 1.
