Blueberry Ice cream🍦💜 No machine, no dairy — just pure plant-based goodness!

I made this vegan blueberry ice cream with frozen blueberries, soaked cashews, dates, coconut cream, and a splash of plant-based milk. Before freezing it, I had to taste it — and wow, it was so creamy and delicious, I could’ve had it just like that! It did freeze solid, so I let it thaw, maybe a bit too long 😅 — but it turned into the perfect soft serve. No machine needed, just pure goodness! 💜🍦

2 cups frozen blueberries
3/4 cup soaked cashews
4 Dates (soaked)
3/4 cup coconut cream
plant-based milk as needed

I started with my regular blender then switched to an immersion blender for a smoother blend and it comes out perfect 🥰
