“Octopus and Potato Anchovy Salad”. There are more and more gloomy days, and the rainy season has finally arrived in the Kanto region🐾. This season of high humidity not only makes you feel down, but it also has various effects on your body… When I’m not feeling well, the first thing I worry about is my intestinal environment. The intestines have such a big impact on the body that they are called the second brain. Today’s video is a salad menu that is full of dietary fiber to regulate the intestines. I’ve put together some salads I’ve made recently that are nutritionally balanced and delicious to eat. I’ll use new potatoes, avocado, tomato, dill , and octopus. Octopus is low in calories and rich in protein, so it’s also recommended for dieting:-). I’ll also finely chop the anchovies to mix in as a dressing. I’ll lightly cool the diced steamed new potatoes. 2-3 slices of anchovies, 1/2 tablespoon of white wine vinegar, 1 tablespoon of olive oil, and black pepper. Avocado, cherry tomatoes, octopus, and dill. Mix well and season with salt and black pepper to finish. Arrange on top of baby leaves. New potatoes contain several times more vitamin C than regular potatoes. Moreover, the vitamin C in new potatoes is relatively resistant to heat thanks to its starch. Furthermore, it does not flow into the water when steamed. I think the nutrients are more likely to remain :-). Vitamin C is not only good for beautiful skin, but also helps boost immunity, so it is a nutrient that you should actively take in ♪. “Colorful vegetable salmon salad”. Cut the new onions so that they cut the fibers and spread them out on a tray to remove the spiciness. Just leaving them in the air for 2-30 minutes will remove a lot of the spiciness. If you have new onions that are too spicy or don’t like them, you can soak them in water 👌. Dice the cucumber. Cut the tomatoes to the same size and shred the purple cabbage. Cut the salmon into small pieces and arrange them on top. Spread the lettuce, place the new onions on top, and arrange the cut vegetables in a colorful way :-). Tofu, broccoli sprouts, and white sesame seeds are also included. The dressing is a poke bowl-style hishio dressing. 1 tablespoon hishio, 1/2 tablespoon boiled mirin, 1/2 tablespoon vinegar, and 1/2 tablespoon sesame oil. This fermented seasoning dressing is also expected to aid digestion. Salmon is rich in nutrients that are good for your skin. It is also effective in improving UV damage, which is a blessing for the coming season. Of course, salmon is rich in nutrients that are good for your body other than your skin, so if you eat it with vegetables that are full of dietary fiber, the nutritional balance is perfect:-). “Garlic Chicken Salad”. Today, we have an appetizing garlic chicken. 100g of chicken thigh meat cut into bite-sized pieces is seasoned with 1 slice of garlic, 1 tablespoon of sake, 1 teaspoon of soy sauce, and black pepper. Delicious cucumbers are starting to appear in the greengrocers, and we are starting to feel the arrival of summer 🌻. I cut the cucumber into thin strips, halved the cherry tomatoes, and cut the carrots into thin strips with a slicer. I grilled the chicken and garlic in olive oil. When the garlic starts to burn, I moved it to the side on top of the chicken. I spread out the lettuce and baby leaves, and arranged the marinated purple cabbage (prepared), carrots, cucumbers, tomatoes, and garlic chicken. Broccoli sprouts. It’s delicious enough with just salt and oil, but since I’m here, I’ll use sesame dressing today:-). 1 tablespoon of ground sesame, 1 tablespoon of soy sauce, 1 tablespoon of boiled mirin, 1 tablespoon of vinegar. The meat salad is very satisfying. Even if you’re not good at vegetables, it’s easy to eat with the rich sesame sauce and chicken:-). “Pumpkin and broccoli sauteed salad with grain mustard”. I cut the pumpkin and broccoli into small pieces so that they’re easy to eat. Grill in a frying pan with olive oil. Sprinkle with a little salt. Once browned, cover and steam until soft. Separate the leaves and stems of the kale. Kale is known as the king of vegetables because it contains a balanced amount of nutrients. It is a superfood that is rich in dietary fiber, vitamins, and antioxidants. Stir-fry the stems with pumpkin and broccoli. Saute with whole grain mustard, balsamic vinegar, and salt. Place the saute on top of the kale. Marinated purple cabbage, tomatoes. Grate plenty of Parmigiano Reggiano. Pour on balsamic vinegar and olive oil. Many people may be concerned about the unique bitterness of kale, but it is recommended to grate plenty of cheese to make it milder:-). “Salted mackerel and deep-fried tofu radish salad”. Grill salted mackerel and deep-fried tofu. Cut the radish into thin strips and lightly rub with salt. Radish is rich in enzymes. Eating it raw allows you to ingest it without destroying the enzymes. And mizuna. The green and yellow vegetable mizuna is rich in dietary fiber and vitamins, as well as calcium and iron! It has the same amount of iron as spinach, which is said to be rich in iron :-). Cucumber, myoga, shiso leaves. Summer vegetables with a crunchy texture and a nice aroma. The dressing is shio koji ponzu dressing. 1 tablespoon shio koji, 1/2 tablespoon ponzu oil, 1/2 tablespoon simmered mirin oil, 1/2 tablespoon sesame oil. Lately, when I can’t decide on a dressing, I feel like I’m making this. Mizuna, daikon, cucumber, crispy fried tofu and salted mackerel. Myoga, shiso leaves, sesame. The daikon salad has a crunchy texture and is very satisfying to eat 👌.
