    Protein-Packed Tofu Miso Soup

    Recipe – Protein Tofu Miso Soup (serves 1)
    • 1 packet Atomy Triple Up Protein (12.5g protein)
    • 70 kcal worth of firm tofu (7g protein)
    • 1 tbsp miso paste
    • 1 tbsp sesame seeds
    • 1 cup spinach
    • 1 tbsp dried porcini mushroom
    • 1 pack Atomy Olive Oil Grilled Seaweed
    • 1 cup water (or low-sodium broth)

    Instructions:
     1. Rehydrate porcini mushrooms in warm water for 10 minutes.
     2. In a small pot, bring water or broth to a simmer.
     3. Add tofu, mushrooms, spinach, and sesame seeds. Simmer for 5 minutes.
     4. Turn off heat, stir in miso paste and Atomy Triple Protein until fully dissolved (don’t boil it).
     5. Top with Atomy Grilled Seaweed and enjoy!
