[Japanese Mom in Paris] Easy & Nutritious recipes for a hard week | Best vegetable soup, Korean etc.
I brought back these beautiful mimosas on the way back home from dropping off my daughter Fresh foods from the market too! work out a little over an hour push-up beginner I resumed hip training (I broke my tailbone the last year…haha) a bit of stretching and cleaning the mirror Hi! Today I went grocery shopping and did some work out and now I will cook dinner before picking up my daughter This week, I am going to shoot the videos of y weekday cooking Recently, the covid situation is not good in Paris. It is tough when you are with kids. We need to go pick them up whenever there is someone positive for covid and need to take them to get tested. It happens so frequently and I guess everyone is suffering from that. People including me are, I think, tired these days. So this week, my cooking is going to be easy and nutritious so that it gives you energy On Mondays, I usually eat left-overs from weekend cooking, and on Fridays, I eat out with my family and friends. So the video will be about Tuesday to Thursday. The main dish today is grilled sardine with bread crumbles. It is super easy! I will cook vegetable soup and tomato pasta. First, I will start with vegetable soup. I will put bell peppers, cherry tomatoes, carrots, green beans and romanesco This romanesco was supposed to be used for a home party the last weekend, but it was cancelled due to sick kids. I am gonna stir fry vegetables one by one from the most hard one, which is carrot. I cut everything in 1cm sized dice I know cutting vegetables is time-consuming and bothersome… but you can eat this soup for 2-3 days and it contains a lot of vegetables. Perfect for your health! When we cook vegetable soup not thinking anything, the flavor is not that good, it just tastes “nutritious”, however, there are some tips to make it delicious. This kind of pan (STAUB, LE CREUSET etc) is perfect for bringing out the flavor of the ingredients. Heat the olive oil and stir fry and steam the vegetables one by one. It bring out the favor of vegetables! Put the carrots and stir fry them. Add a bit of salt Put the lid on and leave it on low-mid heat. You can put any vegetables you like. You can even put any small leftovers from making your salad I avoid only coriander and burdock Add romanesco and repeat the same thing. bell peppers, cherry tomatoes and mushrooms to finish with. When I think about salad, it is very energy consuming. We need to wash the vegetables, strain the vegetables, make the dressing, boil vegetables if needed, toss them…..and my kid does not appreciate it at all! but soup is very easy and nutritious! That is what I like. I think what I said was pretty common though, haha I am gonna repeat the same thing with the last vegetables I put organic vegetable broth. I do not put salt now because this kind of broth contains salt. I will adjust the taste with salt at the end of the cooking. I let it boil and put the lid back on and leave it for 30 minutes on low. I put parmesan cheese before I serve it. Mince the garlic for the main dish and pasta I am gonna finish cooking in 30 minutes Why am I wearing white clothes to cook tomato sauce? Stir fry minced garlic with olive oil and put canned tomatoes and let it boil Keep heating on low until the sauce gets
concentrated If the line stays for 3 seconds when you draw a line with your spatula, it is ready! Absorb the liquid of sardines, Add salt. We will not add any seasoning after this so need to put enough salt. Grind black peppers I always buy ”pain de mie” at a bakery and make these bread crumbles and freeze them. Commercially available Japanese bread crumbles contain too much additives and most of all, Asian super market is far so I make them. Process the bread crumbles, herbs, and garlic in the food processor Sprinkle on the sardines and put olive oil and grill it in the Dinner is ready This soup is really good! Is it? The vegetables are so sweet I like the way the vegetables are cut Amazing bistro, everything was too good! Today is so cold so I am gonna make Korean chicken stew with garlic chives sauce and also Korean vegetables side dish, namul. When you do not feel like cooking 2 dishes, you can put other vegetables you like in the stew. Put chicken, smashed garlic, ginger, leek (only green parts) , water in the pan and let it boil You can either cut the chicken together with the bones or can remove the bones and put the bones in the pan together. It gives your soup excellent! This is gallic chives sauce I made this morning. I just mixed garlic chives with sugar, soy sauce, sesame oil and vinegar. My daughter came home with her baby sitter and cannot stop saying ” I am home!” I cut the potatoes in a big chunk like this I prepare for the namul at the same time. Wrap tofu with a napkin so that it can absorb the excess liquid. It is perfect if you can put a pan on it! Once it boiled, remove the scum, add potatoes and heat it on low for 20 minutes I am going to prepare the namul meanwhile. This is “Benriner” which I brought back from Japan. It helps me to julienne the vegetables! I will season all the vegetables with this sauce. Grated garlic, sugar, sesame oil, soy sauce and grated sesame season avocado, broccoli and carrots I put the dehydrated tofu! and it is ready! You want to eat now? Go ahead! Chicken stew is ready too. I put leeks and rice cakes too. Beer♪ Avocado namul is so tasty It goes very well with beer We can eat a lot of vegetables with this recipe Do you want to show how you eat carrots to your daddy? Daddy! Look at me Good job! Chicken stew with garlic chive sauce and chili powder We all ended up in t shirt when we are eating stew I only edit today Today, I am gonna cook really quick It will be one plate dinner I will season chicken with salt-marinated rice malt, butter, lemon and balsamic vinegar Put some vegetables and carrot rice aside My daughter does not like salt-marinated rice malt (塩こうじ) but she likes this recipe I marinated the chicken with salt-marinated rice malt and leave it for 15 minutes. For the carrot rice, I put carrot, olive oil and salt. Cook the chickens from the skin side on the frying pan, flip them over and put the lid on. Heat on low for 5mins. Take the chickens out once they are ready, Absorb the excess liquid Put butter, lemon and balsamic vinegar Easy sauce is ready! Easy one plate dinner with vegetables (Cresson, broccoli and tomatoes)

DAY1
◆Grilled sardine
Put 12 fillets of sardine in a tray, sprinkle some salt and pepper.
Mix 1 cup of bread crumbles, 1 clove of garlic, 1/2cup of dill, 1/2cup of Italian parsley with a food processor and put it on the sardines. Pour olive oil on it. Grill in 200℃ oven for 15 mins.
Taste with a slice of lemon!
◆Tomato pasta
Stir fry the minced garlic with olive oil, put canned tomato, add salt and heat on low-mid heat. Add salt if needed and toss with pasta.
◆Vegetable soup
Cut all the vegetables you like into 1cm dice size.
Stir fry them one by one from the hardest vegetable. Add a bit of salt and steam them. Repeat the same action for all the vegetables.
Add water and soup broth then heat on low for 30 mins.
Add salt if needed and serve with parmesan cheese.
DAY2
◆Korean Chicken Stew
⑴Put chicken, leek (only the green part), smashed garlic and sliced ginger in a pan.
Let it boil and remove the scum, Add potatoes. Heat for 20 mins and if possible, leave it for 30 mins.
⑵Add salt, leeks and rice cake (If possible Korean one)
⑶Taste with garlic chive sauce (6Tbsp of soy sauce 、1Tbsp sugar, 3Tbsp vinegar, 1Tbsp sesame oil, some sesame and garlic chive)
◆Namul
Boil broccoli
Cut avocado
Julienne and micro-wave carrots
dehydrate tofu
Toss them with a sauce (4Tbsp sesame oil, 3Tbsp grated sesame, 1/2tsp sugar, salt and grated garlic)
DAY3
◆Lemon butter chicken
Marinate chicken with salt marinated rice malt
Wipe off the liquid then pan fry them from the skin side.
Flip them over and put the lid. Heat on low for 5 mins.
Take the chickens out and remove the excess liquid in the pan.
Add lemon juice, butter and balsamic vinegar in the pan and make the sauce.
◆Carrot rice
Cook 2 cups of rice with a little less than 2 cups water, a bit of olive oil, julienned carrots and salt.
