    Roasted Cauliflower Asparagus Spring Salad with a mustard dressing

    Salads do NOT have to be boring. My goal is to help you increase your vegetable intake, while making it enjoyable and satisfying! This is a tasty, light & refreshing salad perfect for spring or summer.

    Serves: 2
    Ingredients:
    1/2 small head of cauliflower
    2 tsp olive oil
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1 Tbsp nutritional yeast (or you can use freshly grated parmesan cheese)
    1 cup cooked quinoa
    1/3 cup frozen peas
    1/2 bunch asparagus, cut into small 1 inch pieces
    1/2 bunch parsley, minced

    Dressing ingredients:
    2 Tbsp olive oil
    1/2 lemon, zested & juiced
    1 tsp mustard seed
    1/4 tsp garlic powder
    salt to taste

    Directions:
    1. Preheat oven to 375 F. Trim 1/2 head of cauliflower into smaller pieces. Add to a baking sheet, sprinkle with olive oil, garlic powder, onion powder, and nutritional yeast (or parmesan cheese). Roast in oven for 15-20 minutes.
    2. Bring a medium pot of water to boil. Wash and trim asparagus into smaller 1-inch pieces. Add peas and asparagus to the boiling water for 1 minute.
    3. Drain water and shock peas and asparagus in an ice bath. Dry the asparagus and peas and set aside.
    4. In a large bowl, add cooked quinoa, roasted cauliflower, asparagus, peas, parsley and mix together.
    5. Mix all the dressing ingredients and pour over vegetables. Mix and enjoy!

    Note: You can have this stand alone or add additional proteins like chicken, shrimp, tofu, or beans.
