I feel like it will be a good day if I can make a nice rolled omelet in the morning:-). However… today, it got a little burnt and became distorted. I will flatten it with a rolling mat to hide it👍. And for the usual teriyaki fish, I add plenty of ginger. 1-2 pieces of ginger, 1 tablespoon each of sake, mirin, and soy sauce, and 1/2 tablespoon of cane sugar. Sprinkle salt and pepper on the marlin, wipe off the water and coat with potato starch. Brown both sides until golden brown. Toss with cherry tomatoes and myoga ginger in ponzu sauce. Add the seasonings and simmer until shiny. The teriyaki with ginger makes the rice even more delicious :-). “Fried fish sandwich, minestrone soup”. Today’s sandwich is fish :-). Sprinkle salt and pepper on the white fish. Since eggs are used in the tartar sauce, make a batter with flour and water. Coat the fish with batter so that it does not come off. Deep fry in a lot of oil. When it is fried golden brown and delicious, drain the oil. Slice the tomatoes. For today’s tartar sauce, instead of onions, vinegar, herbs, etc., I decided to add finely sliced ​​and colorful marinated purple cabbage. Roughly mash two boiled eggs and add finely chopped purple cabbage. About 2 tablespoons of mayonnaise. Season with salt and black pepper to taste. The marinade is already seasoned, so it’s a simple tartar sauce. The ingredients are ready♪. Assemble the sandwiches:-). Spread grain mustard on the bread. Lettuce, tomato, fried fish, tartar sauce… I realized I forgot to put them here. I forgot to put the medium-thick sauce on the fries, so I moved the tartar sauce aside (lol). Wrap the fish in a cooking sheet so that you don’t cut it in the wrong direction. While the sandwich is being mixed, prepare the salad. A hearty fish sandwich is complete♪. We both can’t finish the hearty naughty sandwich. One of them is often a 3 o’clock snack🥪. “Buri soup, pumpkin and nut salad, shirasu natto”. About 300g of steamed pumpkin, 1 tablespoon grain mustard, 1 tablespoon mayonnaise, salt, black pepper. Add crushed nuts and mix lightly. Once you’ve adjusted the flavor, your classic pumpkin and nut salad is complete. Today, I’m going to make fish soup, so I’ll cut the vegetables first. Daikon radish, carrots, and green onions. I’ll boil the daikon radish and carrots in dashi stock. Meanwhile, I’ll prepare the fish bones. (Today I’m using yellowtail). I’ll cut them into marbled pieces and wash them thoroughly. When the vegetables are soft, I’ll add the yellowtail and a little sake and boil them. Since the fish soup is the main dish, I’ll have a light side dish. I’ll skim off the scum from time to time, and when the fish is cooked, I’ll add the maitake mushrooms and green onions. I add a little salt koji and mirin to my miso soup. (If you use a dashi pack that contains salt and umami seasonings, it might be better not to do this as it will be too salty). I changed the way I made the dashi and there was a time when I was lost in the taste of the miso soup, but I’ve settled on this :-). Mmm, fish soup is delicious after all :-). This time, I didn’t simmer the fish, but added it later, so it’s easy to make, but if you do the preparation properly, it will be delicious and odorless. “Grilled salted salmon with sesame seeds, spinach mixed with natto, marinated purple cabbage, miso soup with wakame and fried tofu”. The natto is seasoned with hishio. Mix with boiled spinach. Adjust the taste and the dish is complete. I’m introducing the recipe for my standard side dish, “Marinated purple cabbage”, which I’ve been asked about a lot, for the first time in a while. Salt about 200g of purple cabbage, squeeze out the water, add 2 tablespoons of white wine vinegar, 1-2 tablespoons of olive oil, 1- tablespoon of cane sugar, salt, and black pepper. Adjust the ratio while checking the taste. (For more information about our standard side dish, please see the description:-). Today’s fish is grilled salted salmon with sesame seeds. Today I mixed white sesame and black sesame seeds. Remove moisture with paper and lightly press the sesame seeds to stick them. Cook in a frying pan. When it is golden brown, it is done. Salted salmon is delicious just by grilling it, but it is good to try arranging it sometimes 👌. The roasted sesame is fragrant and has a crispy texture :-). “Salted mackerel baguette sandwich with kiwi”. A familiar sandwich that I make regularly. Add a little soy sauce to mayonnaise to make soy sauce mayonnaise. I also make it with other breads such as white bread, but I like to make mackerel sandwiches with baguettes the most. Spread soy sauce mayonnaise on the bread. Lettuce, salted mackerel grilled with the bones removed. Carrot and purple cabbage marinade. Use vegetables that you have at home depending on your mood :-). I also like to add coriander and fish sauce marinade to make it ethnic :-). It’s easy to make, and the one piece of mackerel is perfect for satisfaction. It’s a sandwich that I sometimes crave :-).
