Ingredients:
• 4 snapper fillets (or whole snapper, cleaned)
• 2 tablespoons olive oil
• 1 lemon, sliced
• 2 cloves garlic, minced
• 1 teaspoon dried oregano
• ½ teaspoon ground cumin
• ½ teaspoon paprika
• ½ teaspoon salt
• ¼ teaspoon black pepper
• 1 cup cherry tomatoes, halved
• ½ cup Kalamata olives, sliced
• ¼ cup capers
• 1 small red onion, thinly sliced
• Fresh parsley for garnish
Instructions:
1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
2. In a small bowl, mix olive oil, garlic, oregano, cumin, paprika, salt, and black pepper.
3. Place snapper fillets in the baking dish and brush them with the olive oil mixture.
4. Arrange lemon slices, cherry tomatoes, olives, capers, and red onion around the fish.
5. Bake for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.
6. Garnish with fresh parsley before serving.
