Recipe: Grilled Chicken & Steak Kabobs
Serves: 4-6 | Prep Time: 20 mins | Marinate Time: 1 hour | Cook Time: 10-12 mins

Ingredients:
For the kabobs:
• 1 lb chicken breast, cut into 1-inch cubes
• 1 lb sirloin steak, cut into 1-inch cubes
• 1 red bell pepper, cut into chunks
• 1 yellow bell pepper, cut into chunks
• 1 red onion, cut into chunks
• 1 zucchini, sliced into thick rounds
• 12-15 skewers (soaked in water if wooden)

For the marinade:
• 1/3 cup olive oil
• 1/4 cup soy sauce
• 3 tbsp honey or brown sugar
• 2 tbsp fresh lemon juice
• 2 cloves garlic, minced
• 1 tsp smoked paprika
• 1/2 tsp black pepper
• 1/4 tsp red pepper flakes (optional)
• Salt to taste

Instructions:
1. Prepare the marinade: In a bowl, whisk together olive oil, soy sauce, honey, lemon juice, garlic, smoked paprika, black pepper, and red pepper flakes. Divide the marinade in half, placing one portion in a separate bowl for the steak and the other for the chicken.
2. Marinate the meat: Add the chicken cubes to one bowl of marinade and the steak cubes to the other. Cover and refrigerate for at least 1 hour (or up to 4 hours for more flavor).
3. Assemble the kabobs: Thread the marinated chicken, steak, and veggies onto skewers, alternating to create a colorful pattern. Avoid overcrowding to ensure even cooking.
4. Preheat the grill: Heat your grill to medium-high (around 400°F). Lightly oil the grates to prevent sticking.
5. Grill the kabobs: Place the kabobs on the grill and cook for 10-12 minutes, turning occasionally. The chicken should reach an internal temperature of 165°F, and the steak should reach your desired level of doneness (medium rare is 135°F).
6. Serve and enjoy: Remove the kabobs from the grill, let them rest for a couple of minutes, and serve them hot. Pair with your favorite sides like rice, salad, or grilled corn!
