今日は、塩麹漬けの【チキンバー】を作りました。
塩麹使い始めた頃、漬けるだけでこんなにも柔らかく美味しくなってハマってしまったのを、思いながら、あの頃は揚げ物が好きだったが、今では、蒸し焼きが美味しく感じています。

今日は3パターンを作ってみました。
●蒸し焼き➡しっとりジューシー。やさしい味わい。
     ➡食感は柔らかく歯切れがよく肉汁がじんわり。お子さんやシニアにおすすめ。
●グリル焼➡表面はパリッと香ばしく中はふっくら。塩麹の旨味が凝縮。
     ➡食感は外カリッ、中ジューシー、焼目も香ばしく、鶏肉の旨味もバツグン。
●唐揚げ ➡カリッとあがってボリューム感あり、塩麹効果で味つけは控えめでも満足。
     ➡食感はカリカリ感と中のしっとり感が対照的。おつまみやお弁当にもぴったり。

昔は唐揚げが一番だったが、今は蒸し焼きがおおいです。でもやっぱりグリル焼は一番美味しいでした。どれも甲乙つけがたく、塩麹のおかげで、何しても美味しいでした。

作り方は簡単、漬けて後は蒸すだけ!焼くだけ!揚げるだけ!なので、ぜひ作って食べて見て下さい。

Today, I made Shio-Koji marinated chicken bars.

When I first started using Shio-Koji, I got hooked on how just marinated food made it so tender and delicious. I liked fried food back then, but now I find steamed food to be more delicious.

Today, I tried making three different types.

●Steamed chicken ➡ Moist and juicy. Gentle taste.
➡ The texture is soft and crisp, with a gentle gravy. Recommended for children and seniors.
●Grilled chicken ➡ Crispy on the outside and plump on the inside. The delicious flavor of the salt koji is concentrated.
➡ The texture is crispy on the outside and juicy on the inside, with a fragrant grilled finish and excellent chicken flavor.
●Fried chicken ➡ Crispy and voluminous, and the salt koji effect makes it satisfying even with a light seasoning.
➡ The texture is crispy and moist on the inside. Perfect as a snack or for a bento.

Fried chicken used to be the best, but now steamed chicken is more popular. But grilled chicken was still the best. They were all equally good, and thanks to the salt koji, everything was delicious.
