    EASY QUESADILLA RECIPE (makes two quesadillas)
    1 cup steamed broccoli, roughly chopped
    1 cup rotisserie chicken, roughly chopped
    1/2 teaspoon cumin
    1/2 teaspoon garlic powder
    Salt and pepper to taste
    2 8-inch flour tortillas (or whatever type of tortilla you prefer or love)
    2/3 cup shredded cheese (i like a mix of Monterey and cheddar)

    Optional
    1/2 cup plain Greek yogurt
    1-2 tablespoons Sriracha sauce

    Toss broccoli and chicken in a non-stick skillet over medium-low heat. Season with cumin, garlic powder, salt, and pepper. Stir well and cook until heated through. Transfer seasoned meat and veggies into a small bowl.

    Place one tortilla into the hot pan and gently heat for 20-30 seconds or until heated through. Flip the tortilla and place a couple of tablespoons of cheese over one-half of the tortilla. Sprinkle half of the broccoli and cheese mixture over the cheese.

    Using a spatula, fold the tortilla over onto itself to form a half-moon and top with another pan or teapot t help hold to down (you can also hold gently push down with your spatula for a minute).

    Cook for two minutes or until the bottom is lightly browned. Flip the tortilla and cook for another two minutes or until both sides are lightly browned and cheese is melted.

    Remove from pan, cool, and cut in half!

    Optional: combine Greek yogurt and Sriracha sauce to create a cool and spicy dip for your quesadilla.

    3. Oh these look delicious. I want to think if I can make a version that I could eat. I dont eat gluten or most dairy but do eat a little goat cheese…I will have to give this some thought. (The goat feta is lovely crumbled on top of other dishes and it melts well so thats a start.)

    5. Hello Dani from our working farm in New Hampshire! New to your channel and it is perfect timing! My first PCP check up, in two years, was last week. She read me the riot act :-O. We had to shut our farm down to the public in March 2020, only staying open to local farms, who depend on our hay and Hereford breeding stock. I had to retire and began stocking our two farm properties with dry panty foods, canning, freezer items and necessities.
      That took up so much of my day. It was intensive and stressful. I began to put on extra weight that drove my BP. My lab profile went downhill. Today we continue to be shut down, but all the hay is in. All the 2021 calves are born and the gardens are in. And I am finished stocking up! November 1st marks the beginning of a new eating lifestyle. I rarely eat prepackaged foods, but need to eat more chicken, fish, vegetables and fruits. Also need to lower my sugar and carb intake. I like this quesadilla recipe. So glad I found your channel! Oh, and I start Restorative and Chair Yoga as well. Important I take care of myself and address good sleep. A calmer me, now that the farm season has closed, will go far. I want to ring in the New Year 🎇🎉🎉 a slimmer, more centered me!     8. I can’t wait to make this. I looked at the tortillas in my fridge and noticed it said 0 cholesterol but had hydrogenated vegetable oil and soybean oil. I thought 0 cholesterol meant that. Is there a brand out there that doesn't have hydrogenated oils? Or am I worrying over nothing? Btw your tuna salad is the best.
