How to make CHIRASHI SUSHI 🎎 〜ちらし寿司〜 | easy Japanese home cooking recipe

In this video, I am showing how to make Chirashi Sushi (actually pronounced Chirashi-Zushi), a type of Sushi often made at homes for festivals, especially in “Hina-matsuri” (雛祭り), a festival for girls, where we decorate the house with “Ohina-sama” (お雛様, this→🎎), a special set of traditional dolls. In Japan these are also topped with raw fish or Ikura (raw salmon eggs). I am showing in this video an easy version of this.

In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.

Ingredients for Chikashi Sushi:
Sushi rice for Chirashi Sushi:
– Japanese sticky rice 1 Cup
– Water 1 Cup
– Kombu kelp 2.5 g
– Sugar 1 Tbsp
– Vinegar 2 Tbsp
– Dried Shitake 2-4
– Carrot 1/2
– Sugar 1 Tbsp
– Vinegar 1 Tbsp

Toppings for Chirashi Sushi:
– Egg 1
– Sugar 1 Tsp
– Prawn 2-4
– Avocado 1/4 -1/2
– Roasted sesame seed

*Other possible toppings: Sashimi, Ikura, Unagi, Nori,
Cucumber etc.

  3. I love ❤️ that there is a girl festival in Japan (we NEED one!) that dish you made sounds amazing!! Right now I am having difficulties getting sushi/glutinous rice from our supermarket (until the pandemic. my supermarket stocked it, but now we have Brexit….) so I substitute with basmati rice.

  5. Thank you for the recipe! Personnally, when I prepare 薄焼き卵 (the thin omelette), I prefer to put mirin rather than sugar. And I heard that sesame oil doesn't tolerate well the strong heat of the pan: is it true?

  7. We have Bara Chirashi and Kaisen Chirashi at our local Japanese restaurant in the US, but they put a variety of sashimi on top of sushi rice and also a slice of sweet rolled egg and/or ikura on top. Is what I described an American version as opposed to what they make in Japan?

Hi Taiji-san, I 'my most impressed with your skills at explaining these steps, and how versatile you are, considering the fact that we westerners are used to very set formulas, from Japanese standard restaurants. I' M not surprised at your success, since you put these recipes in the reach of the layman amateur 😊 ! But though I believe this is common knowledge to most Japanese food lovers, you must have noticed eating mushrooms raw is not uncommon with the usual types found in our markets. However, I'm not sure all your viewers are aware that the Shiitake ones are fairly toxic, if left uncooked when fresh. Obviously, dried ones wouldn't be palatable unless stewed, but now that fresh ones are currently available, may I suggest you explicitly underline that, if using fresh ones, those MUST BE COOKED by any means, too, to prevent intoxication ? I might be very behind, with this remark, and if it's the case, I apologize, but I think you did make a note, to watch out when foraging for certain wild greens, and I believe that the same applies for this case. Also, if using raw fish for sashimi, deep freezing it first, over 48 hours, is the best way to prevent food-borne illnesses from certain parasites !
