人参、ゴボウ3分→水で冷やす
筍、1分→水で冷やす
こんにゃく5分→冷やさない
れんこん5分→酢水で冷やす
里芋3分→酢水で冷やす
さやえんどう→茹でない
椎茸→水戻し30分

Carrot, burdock 3 minutes → Cool with water
Bamboo shoots, 1 minute → cool with water
Konjac 5 minutes → Do not cool
Lotus root 5 minutes → Cool with vinegar water
Taro 3 minutes → Cool with vinegar water
Sayaendo → Not boiled
Shiitake mushroom → 30 minutes to rehydrate
