Coconut Chickpea Curry (Oil Free!)
🔥Ingredients:
1 cup coconut milk
2 teaspoons curry powder
2 teaspoons turmeric powder
½ cup chopped onions
2 cloves garlic, minced
1 tsp thyme
1 tsp cumin
2 tsp Foodamed Chicken-Style Seasoning/ Savory Seasoning salt
1 tsp salt (or to taste)
2 (15 oz.) cans chickpeas
1 small potato (cubed)
Instructions:
In a pot saute’ a small amount of coconut milk along with the curry and turmeric powders
Allow it to simmer for 2 to 3 minutes on low-to-medium heat
Add, onion, garlic, thyme and other spices
Add potato and chickpeas.
Add remaining portion of coconut milk, adjust for taste and allow to simmer on low-medium heat for another 30 minutes or until potato is tender.
