Here is a really easy, delicious and satisfying meal of Italian style meatballs that you can throw together in under an hour and have on the table for these busy nights during the holiday season! Using the tools you have invested in is the best way to make life easier. My electric pressure cookers (yes I have more than one) save the day on a regular basis.
These meatballs are delicious and taste like they have been simmered in sauce all day. Take help from the store. Use your favorite sauce and get the job done! No judgement here and I expect none in return from others who think they are too good for a jar of Ragu! Face it, we have all done it! No shame on my end and there should be none on yours! Just sit down to a bowl of homemade spaghetti and these pressure cooked meatballs and you will know what I mean!
These start with two pounds of 80/20 ground beef and then the requisite additions of egg, bread crumb and seasonings and cheese. Sometimes I add a bit of milk to the mix to get a very tender meatball. These are portioned out. I got about two dozen from this batch and baked them off for about 30 minutes. I only ever make meatballs this way. Baking them makes them super easy to deal with and if you are a fan of freezer banking you can cool these, portion them up and freeze them for other meals in the future like meatball stroganoff, sweet and sour or cocktail meatballs, Swedish meatballs or good old spaghetti and meatballs.
The trick to getting slow cooked taste is to then put the meatballs in the pressure cooker with the sauce of your choice. Since these were already cooked, I set them on the veggie setting on my Power Pressure XL pressure cooker. I recommend that you refer to the owners operating manual for your particular make and model or use your best judgement for your machine. Every one is a little different and since I don’t have an Instant pot, I cannot say how they would be set. It would be my guess that they are pretty close though.
