Mackerel And Potato Salad: Simply Sublime

Ingredients:

4 cooked smoked mackerel fillets
1 pink grapefruit
1 avocado
100g watercress
2 soft boiled eggs
2 tbsp pink grapefruit juice
1 tsp mustard
50ml olive oil
Salt and pepper
4 medium potatoes, peeled and halved
1 pinch salt
30g plain flour, plus extra for dusting
1 tbsp melted butter

Serves: 4
Prep: 20 minutes
Cook: 10 minutes

Step 1: Make The Dressing
In a bowl, mix together the pink grapefruit juice, mustard and olive oil. Season with salt and pepper.

Step 2: Make The Salad
In another bowl, mix together the watercress, and sliced avocado and grapefruit. Remove the skin from the mackerel and break the fillets up into the salad. Then drizzle the dressing over the bowl and mix well.

Step 3: Make The Potato Farls
In a pot, cover potatoes with water and bring to a boil over high heat. Simmer on medium-high heat until the centre of the potatoes are tender when checked with a fork, about 20 minutes. Turn off heat. Drain, return potatoes to pot and allow to completely dry out over remaining heat. Mash until smooth. Place warm mashed potato in medium bowl. Stir in flour, salt and melted butter. Mix lightly until dough forms. On a well floured surface, knead the dough lightly. The dough will be sticky. Use a floured rolling pin to flatten into a 9 inch circle about 1/4 inch thick. Cut into quarters using a floured knife.

Step 4: Cook The Eggs
Boil the eggs for about 6 minutes.

Step 5: Cook The Potato Farls
Sprinkle a little flour into the base of a dry frying pan and cook the farls for 3 minutes on each side or until evenly browned. Season with a little salt.

Step 6: Serve
Serve the farls straight away with the salad and egg.
