*FALL DINNER MENU- Bread Bowls- Bacon Potato Chowder- Pumpkin Crunch Cake *
Today’s video is all about comfort foods in the colder fall months. Homemade bread bowls from scratch, potato chowder, or potato soup ( chowder is chunkier than soup), and a super easy dessert. Pumpkin Crunch cake. This is a variety of a dump cake, but with a pumpkin custard instead of a fruit or berry.
Bread recipe~
2 Cups flour
1 pack of active dry yeast
Combine, and set aside.
Heat slowly~
2 1/4 cup milk
2 teaspoons sugar
1 tablespoon butter/shortening
1 teaspoon salt.
Heat until Butter almost melts, then add to flour, yeast mix. Once combined, mix on high for 3 full minutes.
Then add in as much as you can of 4 cups of flour.
Mix with hands until combined, then knead dough for 5 to 8 minutes until you have a stiff, but elastic dough. Place in greased bowl covered until double in size. Once doubled, much air out, and let rest for 10 minutes. Shape dough, then cover again, and let rise until doubled in size. Bake at 375 degrees for about 40 minutes, (or golden).
Bacon Potato Chowder Recipe~
Cook full pack of bacon until crisp, remove bacon, and reserve grease in pan.
1 cup chopped onions
3 stalks chopped celery
Cook onion, and celery in bacon grease, and set aside.
7 russet potato peeled, and diced
boil in 4 cups water with 4 teaspoons chicken bouillon added
Add 1 teaspoon butter to potato, and 1 bay leaf
Once potato is done, remove bay leaf, and add onion, celery with bacon grease.
1 1/2 cup half, and half, with 2 tablespoons flour mixed in.
Slowly add half, and half to potato soup
Add 1 teaspoon salt, and pepper
Crumble 4, or 5 strips of bacon in soup.
Pumpkin Crunch Cake Recipe~
1. 29 ounce can of pumpkin puree
1 cup packed brown sugar
3 eggs
3/4 cup half, and half
2 teaspoons pumpkin pie spice
Mix all until well combined, then pour into greased baking dish.
1 box spice cake mix (or yellow cake)
Pour dry cake mix on top of pumpkin custard
1 cup sliced almonds, or pecans on top of dry cake mix
1/2 cup melted butter poured over top of dry cake mix.
Bake at 350 for 30 minutes, or until toothpick comes out clean. 🙂

I will have to make the bacon potato chowder. But I will have cornbread with mine. And can you swap pecans or walnuts for the almonds?
